I was stunned by how well crafted this lambic is. Cherry mahogany red oak flavors with a sour leather aftertaste and the acidity seems so well balanced. The pour revealed a gorgeous deep red brew that sported a lightly colored pink head with lively carbonation present in the glass. Aroma of sour cherries wafted from the glass, and presented a wondeful experience for the nose. Sour cherry spice? This beer puts forth that flavor and makes it work to perfection. The sour aspect hits first, of course, but does not overwhelm at all. In the middle of the experience, the cherry flavor makes itself known without being unwelcome. Finally, a dash of peppery madness arrives and suprises the taste buds in a delightfuly delicate dance of flavoring. Vivid, exciting bright real red fresh cherry juice vibrance, alive with dripping moisture and a wildness of the pits. Florid and bright vermillion, with a rose fringe and blush head. Flavor is a sweet, chirping acidity in the note of perfected aged cherry alcohols, fresh flesh and pining pits. Amazing balance derived singularly from the fruit. Much better than lindenmans, because less sharp and less sweet. The best Cantillon. Tried it at the12 hour Belgian beer partyin Carlsbad, CA. Possibly the best beer tasting ever,with 70 bottled rare and expensive beers and 20 on draft.
