Commercial Description:
Please note the age of the sample you are reviewing when entering your rating. While many factors determine whether you have had "Jonge" or "Oude" Lambik, a general rule of thumb is to enter 1 year-old or older lambik under "Cantillon Oude Lambik" and anything less than 6 months-old under "Cantillon Jonge Lambik".

For those between 6 and 12 months of age, you should take in to consideration the character of the lambik. Samples presenting themselves as hazy/cloudy, with some head-formation and residual sugar should be entered as "Jonge Lambik", while those that are drier, higher in clarity and with little/no head formation should be entered as "Oude Lambik". If in doubt, message JorisPPattyn.

Aroma: some musty/earthiness, some sand, some grape skins, some pear brandy, some woodiness
Appearance: golden, honey, yellow-orange
Flavor: honey, light fruit, some earthiness/minerals, finish strong with lactic acid
Palate: overly lactic aftertaste

Draught @ Weekend of Spontaneous Fermentation 2008. Clear amber with no head. Mild applejuice flavor with woody notes. Ends mild sour.

Weekend of Spontaneous Fermentation 2008. Lightly hazy honey color. Nose of honey and vegetal malt, and tastes of some lactic fishy notes and some sharp liquor and white wine as well. Not as good as the jong but still nice enough.

Draught yesterday @ Spontaniousweekend ’08. Hazy golden color, no head. Aroma sourness, lambic, wood. Medium body. Taste malts, fruits, sourness, dry. Refreshing.

On tap @ Moeder Lambic. Opaque beer, no head, the color of fresh apple cider. Lemony and funky-sour apple nose. Sour and earthy flavor with citrus and harsh apple-skin. Difficult but very interesting. Just a touch of acid, mostly flat. Love going back to ponder it again and again.

Tap. Nice hazy golden with orange hues and no head at all. Very fruity, peaches, apples, lemons, wood, little barnyard, nice sourness, very refreshing and dry.

A Mes rate: Draught at Bruxellensis. Slightly hazy dark gold. Great aroma of whiskey, plenty tannin and dry and earthy. Flavour as the nose but with a lovely mellow dry and tart finish. Glorious lambik, entirely as expected.

Bruxellensis. 3 years old. Very intense aroma. Honey, grapefruit, lemon, wood. Oaky flavor. All what I found in the aroma comes back with the same complexity and intensity. No carbon, off course, totally flat. Close to perfection.
