Commercial Description:
Please note the age of the sample you are reviewing when entering your rating. While many factors determine whether you have had "Jonge" or "Oude" Lambik, a general rule of thumb is to enter 1 year-old or older lambik under "Cantillon Oude Lambik" and anything less than 6 months-old under "Cantillon Jonge Lambik".

For those between 6 and 12 months of age, you should take in to consideration the character of the lambik. Samples presenting themselves as hazy/cloudy, with some head-formation and residual sugar should be entered as "Jonge Lambik", while those that are drier, higher in clarity and with little/no head formation should be entered as "Oude Lambik". If in doubt, message JorisPPattyn.

From a jug at the brewery, batch from Winter 2007/2008 sampled in October 2008. Pours orange, almost clear with almost no carbonation and no head. Malty and spiced aroma. Flat and light citric initial flavoured. Mild bitter and spiced too, didn’t have any sweetness to it. I dont really understand the hype for this unfinished product.

[Draught at GBBF, 2 years old] Dark yellow, flat, almost clear. Cidery, vinegary citric barnyrad aroma. Light but firm body, distinctly sour, but not as mindogginly sour as some of the bottled Cantillons. Complex and just wonderful.

Draught @ 17th Weekend of Spontaneous Fermentation 2008.
Light unlear medium orange color with a virtually none appearance, virtually none lancing head. Aroma is moderate malty, wheat, gum, wood, sourness. Flavor is moderate sweet and sour with a average duration. Body is medium, texture is watery, carbonation is flat. (240508)

Cask F12 at the brewery. Fruity, acidic aroma. Clear golden/orange colour, no head. Acidic and bitter. A little more sweetness and a fresh acidity in the end. 6 3 5 3 11

GBBF08. Hazy amber colour. Citric teaish flavour, hint of vomit, perhaps mold. 7 3 7 3 16

Draught@GBBF2007, 2 years old. Slightly hazy yellowish golden colour with minor white head. Aroma is wooden, very sour and slightly appleish/apricotty. Flavour is wooden, sour fruity and really pleasantly balanced. Refreshing and very nice.

Hazy dull straw. The aroma is surprisingly hoppy, minty with some honeyed malts and perhaps just a hint of pedio. Phenolic, but minty with an understated herbal dryness. Very different example.

From the cask at the Cantillon Brewery; batch F-10 from January 2003, 17 months old
Golden color. Classic, pungent aroma, cobwebs. Very smooth, still some residual sugars, more bitter than sour. Not as fruity as the Cognac version.
