The aroma is acidic with strong notes of berries, wine, and tea - as well as a light hoppy note. The flavor is acidic in a wonderful way with notes of acidic grapes, grapefruit, and other unripe fruits. The acidity draws the mouthwater, before a dry end sets in. Lovely. Underneath the trademark acidic Cantillon aroma there is a mere hint of blueberries and red wine. Heavily acidic witj plenty of citric acid. Very dry. The Pinot Noirs are evident, but in comparison with most fruit lambics they are more subdued. Concentrated citiricity - it feels like one of the most hardcore acidic Cantillons. Aroma is dark grapes, barnyard, sour vinegar. Flavor is moderate to heavy sweet, acitic and acetic (vinegar) with a long long duration. Lovely balance and a dry dry finish. Pungent aroma, of the oldest cellar, first, then a confusing mix of fruits: grapes, sour pink grapefruit, lemons…). Thin and dry mouthfeel, one of the most sour I ever had, pure lemon juice, without sugars and of course the astringency sneaks in towards the final; the acidity burns down the guts, beware, not for the faint heart.
