Commercial Description:
"It has the colour of onion skin", said a voice behind me. It was Raymond Coumans. He was admiring the colour of the raspberry lambic reflecting in the red copper of the buckets used to empty the barrels. At that time (1986), "Raspberry-Lambic" already was synonymous with a sweet, artificially flavoured beer. This is why we decided to distinguish our beer from the other raspberry beers. Raymond proposed to call it a rosé, dedicated not to Bacchus but to Gambrinus.

The process to make this beer is identical to the one to make Kriek. When young, the Rosé de Gambrinus will still present its full fruity taste. Later on, the lambic taste will become dominant at the expense of the fruit taste.

Pours out redish pink with light pink bubbles. Smells of funky raspberries. Taste is tart and fruity. Lots of acid and sour flavors with some yeasty funk. Crisp and refreshing. Another great brew from Cantillon.

Bottle pours ruby red color with pink head. Aroma is some raspberry, tart acid, vinegar, and must. Medium mouthfeel with a lot of carbonation. Flavor follows the nose and has a lot of tart flavor. The wild yeasts are unmistakable cantillon. This is exactly what I was expecting and was not disappointed. This is a great beer.

Sampled out of the tulip glass: Poured a bright pink colou with a large white head that quickly dissipates. The awesome thing about these Cantillon beers is that they amazing retention so it wasn’t long before the froth came back after each sip. Aroma is raspberry on the nose which hit me the most. On the palate, sour fruits all the way through. A pretty misleading beer. I went into thinking it would be much fruiter. NEvertheless a wicked tastey treat. Thanks John :)"

Bottle from 2008. Poured a pink-orange color with a bubbly pink head that disappears quickly. Fantastic aroma! Strong raspberries, alcohol, and very tart. Flavor is . . . sour! And that’s great. Very acidic, tart, and funky. Light bodied, but fills the mouth with carbonation. I really enjoyed it.

Bottle (c.2008?) from New Beer in the Bowery NYC. Absolutely beautiful pour with pinky tones and creamy lacing on the glass. Lovely tart raspberry-lambic aroma. Taste.. ah... ACETIC TERROR. I with several attempts and cooling the beer could not physically tolerate this beer, and it takes a LOT for me to concede to that since I generally can drink anything. I’m pissed that I cannot enjoy super-lambic beers because there are some lesser ones I have truly loved. Ahh... well for 8 bucks a small bottle, I have learned a cheap lesson in Cantillon. Brutal masochistic acidity for some is heaven for others.

2008. Deep cherry/pink, short lasting pink cotton candy head. Slightly tart aroma, some fruit. Sharp tart underripe fruit, soft on the palate, one sided. Think I’ll like it more with considerable age.

Bottle at a BeerAdvocate gathering. Hazy reddish color with a small off-white head. Wild sour aroma with raspberry and wild yeast. Flavor is really sour with raspberry and considerable funk. Palate is somewhat sharp and dry. Good, although sour lambics aren’t really my style in general.
