Pours a hazy pink color. Aroma of tart vinegar with strong cherry notes. Flavor is quite sour, this makes the mouth water for more. This was crazy on the palate. Wish I had more of this. Dry cherries in mouth with strong sour notes, very puckering and definitely classic. Rich and complex, with cheese-like qualities. Medium bodied. Sampled at Quintessence Cantillon 2005. The head is bubbly, pink, and soon gone. The aroma is of tart grapes, used pencil erasers, and old sneakers. Oddly, the combination works. More one-dimensional than other Cantillon lambics that I’ve had, this has the flavor of sour grapes alone, very acidic, and very refreshing in the finish. Not bad at all.

Not quiuit as sour as expected with a load of fresh medium sour grapes. Jammy with a lemon tartness that lets a touch of olive come through. Finished zesty with more grapes. Aroma is wine-like, lots of fruit, hints of sulfur, some brett and lactic acid. Flavor has a light fruitiness to it with a moderate sour backbone, although not nearly as sour as some other Cantillons. Finishes a bit tart, acidic and dry. It seems like some of the harsh sulfite content has gone down since the last time I had this over a year ago.
