Commercial Description:
Every year, Cantillon has open brewing days, with animation, known as "Zwanze" in Brussels’ dialect. Fortwith, a special beer will be released every year, with every year a new ingredient: elder flowers for 2009.

From Cantillon on brewing day, pours a hazy yellow with a nice white head. Aromas are wonderfull, the strong soft flowers feels very fresh. The flavors are typical Cantillon, natural sourness and oak and slightly fruity and flowers taste. You can really feel there are no artifitial products here, and you can truly taste the nature. A very dry finish. A very different and pleasant beer.

2 bottles at Le Poechenellekelder sept/oct 2009. & 3 in my cellar!. This is perhaps my favourite beer ever. It needs at least 30 min open before drinking. (The brewer even recommended 24 hours!) Beautiful bouquet of elder flower. Very little head but great colour. It has that great Cantillon sourness, full with the flavour of elderflower. A nice long finish. It was bottled in May 2009 and it really needed a few months to develop.(Cantillon make it for the open day on Nov 7). I hope it will only get better with time.

[9/8/08] Bottle at Le Poechenellekelder in Brussels. Slightly hazy orange color with a big white head that disappears quickly and leaves only a slim film of white foam. Aroma is spicy with powerful elder flowers and wood - hard to detect anything beyond that. Sour flavor with lots of flowery spiciness, some vinegar notes, oak, and a dry, somewhat herbal, finish. Medium-bodied. Good, but way too young at the moment and the elder is still too dominant.

Draft (pressurized) at Chez Moeder Lambic in Brussels. Lovely orange beer, hazy, with a lovely layer of orange-tinted bubbles sticking around. Nose full of sour citrus: orange, tangerine, limes, grapefruit. Although sour it is quite soft and drinkable. Pretty dry on the finish, very light bitterness. Didn’t find the pleasant floral notes until the aftertaste. Absolutely terrific, looking forward to trying it by other means.
