Flavor: sweet apple flavor, alcohol is hot and sweet and a prominant peppery character, touch of oak offers only balance, alcohol finally settles down to leave a really sweet apple brandy of a beer,

A fun experiment which more or less ruined a brilliant tripel even though age might mellow it up.
I like:
Fun madeira-like aspects, almost toffee-like, honeyed and herbal on top of the calvados hot apple profile. This is rather complicated, but not very fresh.
I dislike:
Atrocious appearance: headless and repelling sediments looking like bird excrements. The tripel’s freshness has been lost in the barrel aging. Alcohol presence is exagerated. Strong apple juice, oak and calvadosaroma. Hint of pepper. Very alcoholic beer. Strong flavor of wooden barrels with calvados. Considerable dry out effect because of the wood and the alcohol. Peppery aftertaste. Out of balance because of the overwhelming alcohol but still a pleasant, complex and tasty beer. Try again with an 8% tripel? CaptainCougar (4636), Rockville, Maryland, USA Feb 23, 2008 Pours a slightly hazy copper orange with a frothy, stringy-lacing white head. Aroma of fresh oaky brandy and some sweet caramel malt with a touch of light fruity esters. Starts lightly sweet and brandy oaky with a decent amount of caramely sweetnessand biscuity malt before a drier, warming finish. Pretty interesting and fairly well balanced, but could use some aging to mellow out.
