Commercial Description:
One of the first beers I brewed after moving out to California to begin my brewing education was a Pale Ale. This version is a true testament to the influences the Wild West had on my early brewing. My Pale Ale is loaded with US-grown Cascade, Crystal, and Columbus hops, so be sure to take a good sniff to enjoy their robust aromas before taking your first sip. Sensory Profile: An aromatic beer with notes of citrus, pine, a noticeable bitterness, and a touch of malty backbone to help balance it out. Food Pairing: Foods with a spicy kick are a great match, as the bitterness of the hops will help to cool the palate before your next bite. Mexican food and pizza are natural matches.

A really nice pale ale. Poured a rich amber hue with a short but thick head. Nice hoppy and sweet-smelling head. The taste was also quite sweet, much sweeter than any pale ale I’ve ever tried. It was really, really good. Incredibly smooth and delicious.

Dark golden with a small white head. Aroma of citrus, grassy hops and a hint of peach. Dry and hoppy flavour

Pours a reddish copper with moderate, airy white head. Aroma has more malt than I’m used to with a pale ale, but I like it. Same with the flavor: malt, hops, citrus, and caramel. The bitterness is definitely present but not punch-you-in-the-face strong. Pleasing.

On tap at Ginger Man in CT. Full of hops and fruitiness. Dark golden pour with a small head. Outstanding!

On tap. Pours a fairly deep amber for a pale ale with an off white, frothy head that leaves some okay lacing. Aroma of toffee, caramel, piney hops, bitter nuts. Taste is citrus and resiny hops but this is overpowered slightly by the toffee and caramel giving this beer an almost maple syrup, sweet body rather than a typical hoppy, citrusy pale ale. Closer to an IPA than pale ale. But I think there is a bit too much malt backing on this one.

On tap at the brewery on Castleton release day 2008: Pours a transparent deep copper amber with a spotty-lacing froth of off-white head. Aroma of toasty caramel malt and some piny resiny grapefruity hops. Body starts with good carbonation and fullness for the style with a light pale malty sweetness and good crisp bittering and flavor hop balance. A nice APA.

Growler to my face. Poured amber with a white head. Aroma of pine. Some citrus and pine. Slamable.

Bottle. An all around solid pale ale. Copper amber in color, frothy white head, sweet citrusy nose, strong hop character with a smooth malty finish. Perfect beer for the cooler spring nights.
