Commercial Description:
This is a big, malty and rich Belgian-style abbey ale. We combined both US- and Belgian-malted barley and a specially selected yeast strain to produce a truly unique beer. This beer was brewed as a thank-you to my father Vince who has helped to make this brewery a reality. It will be brewed once a year and released on Father’s Day. This is a great beer for aging, so lay some down and try it in a year or two! Sensory Profile: Ripe fruit, figs and chewy malt are a few of the flavors you will encounter in this beer. There is an underlying roastiness and caramel sweetness that comes through toward the end. Hops play a background role to the malt character of this brew. Food Pairing: This beer can stand on its own as an after-dinner drink. A rich brew to sip and enjoy, it also goes great with desert or roasted meats. Use this beer as you would a full-bodied cabernet or an aged port.

Bottle shared at the Cleveland tasting. I do not know who. The Captain made a pretty big showing though at this shindig! Well, I like the sweet and malty ones, so this one was right up my alley! A lively little brew...Kind of tingly. Flavors of apples and grapes, citrus and plums. I found this almost had a slightly sour taste to it. Would love to see how this one ages.

330 ml draught, Barcade. No head. Brown colour. Subdued raisiny aromas. Smooth texture with little carbonation. Raisiny flavours. Hints of port. Balancing hop bitterness. Oxidized notes. Powdery and a touch of dark malts.

750mL Bottle. Noses forward in plums and yeast minerals. A complex, but maybe confused aroma. Seltzer water over grains. A mature alcohol fruit, if tangy. Interesting, lightly spicy and moderately inviting. Pours a reddish-brown, half-hazed with a growing prosperous head in silky tan. Flavor is rich, but bites a little. There’s a curt tannic ring to the beer that ebbs acidic. This carries over a bed of mature dry fruits, raisin and Frangelico. Complexity and spice, with a high yeast profile. Rather signature of Abbey styles. There’s a bit of a battle for the lead character of the beer. Mature fruit, sustained spice, or alcohol sugars. Hops give a beautiful afterglow in heavenly resin that just rounds the beer delightfully. I’m confused by the mid-palate of the beer. There’s a lot going on and the sensation is perplexing. The carbonation is extremely soft and diffusive. However, there’s a palpable astringency to the body that throws me off throughout the beer. This keeps it down a little. Nonetheless, it’s the most faithfully produced example of the style, with remarkable depth and complexity, yet maintaining drinkability in its freshness and conditioning. Interesting.

750ml bottle probably from maxxdaddy..... pours an opaque dark caramel browm with persisting off-white head.... aroma of assertive dark fruit and caramel sugars and some breadiness... flavors of sacharine dark fruity malts and a little yeast with a sugary afternote.... a fairly sweet dubbel very big on the malt.

Orange, amber colour with a beige head. Malty, caramel and cookie sweet aroma with notes of some fruity and alcohpol sweetness. Malty, caramel sweet flavor with dried dark fruit notes.

Pours out moderately light hue of cloudy brown with a moderate fluffy head. Aroma is of dark fruit, yeast and some caramel. Taste is of dark fruits, fig, date, caramel, slight roasted malt and a lingering sweetness on the finish.

2006 Bottle courtesy of golubj; poured a slighlty murky, brownish color. Aroma of roasted malt, slightly soury fruit, cocoa, and pit fruit. Flavor got better with a little bit of warmth. Flavor of fruit, pit fruit, caramel, roasted malt and a decent hop finish. There was also some banana/yeast and sour elements. Pretty good for the style.

2006 Bottle. Muddy brown pour with some thin off-white head. Light roasted aroma, dark fruit, yeast, a little fruity tartness. Flavor is dominated by lightly roasted malt, some dark fruit and chocolate are in there as well. Sort of yeasty, off-maltiness finish.
