Commercial Description:
This is a big, malty and rich Belgian-style abbey ale. We combined both US- and Belgian-malted barley and a specially selected yeast strain to produce a truly unique beer. This beer was brewed as a thank-you to my father Vince who has helped to make this brewery a reality. It will be brewed once a year and released on Father’s Day. This is a great beer for aging, so lay some down and try it in a year or two! Sensory Profile: Ripe fruit, figs and chewy malt are a few of the flavors you will encounter in this beer. There is an underlying roastiness and caramel sweetness that comes through toward the end. Hops play a background role to the malt character of this brew. Food Pairing: This beer can stand on its own as an after-dinner drink. A rich brew to sip and enjoy, it also goes great with desert or roasted meats. Use this beer as you would a full-bodied cabernet or an aged port.

Pours dark red/light brown a dirty head. The nose is malty, nutty, with some nice ripe fruit character. A nice fruity malty flavor with just a hint of yeast character and alcohol. Easy to drink. Good stuff.

I appreciate how well they where able to copy the "belgian" style (I wouldn’t have been able to tell it wasn’t from a belgian brewery if I hadn’t already been aware). Amber with small foamy head. Spicy, cinnamon notes and a light mouthfeel but rich in flavor. Malts and some alcohol in the backtaste.

Shared by unnamed soul at Stone Sourfest. Orange-amber in the glass. Nose is sweet and smooth, with a definite hint of cat pee. Taste is sweet with a flat bounce on the tongue and mouth. Warm and full.

bottle thanks to biggness (BA)
Mahogany, nice foamy cream colored head, long-lasting. Nose is so delicate... sweet malts, raisin, plum, pepper, hop that recalls a wet forest in the middle of Autumn. All of this rolls on under the faint presence of cognac. Some of this in the flavor, though it’s more simple and alcohol-driven. Moderate body, nice cognac and almond finish. Delicious stuff, ultra-balanced and drinkable.
