Commercial Description:
This beer is an American adaptation to the classic Belgian style of beer known as a Tripel. Historically Tripels were brewed to have a very light golden color, a moderate hop presence, and be around 9% alcohol. But we are not in Belgium, so I decided to crank up the hops, dry hop the beer with American Amarillo hops, and brew it to 10% ABV. This is our American Tripel, enjoy. Sensory Profile: Enjoy in a goblet or wine glass. Tropical fruit and honey are the two biggest aromas coming from this lively brew. While the hop bitterness is not as powerful as an IPA, the hop flavor melds nicely with the fruity flavors created by the imported Belgian yeast strain used. Food Pairing: This beer goes great with roasted vegetables, fish and rotisserie chicken. And it can be used as a aperitif before dinner with shrimp cocktail.

Bottle from The Epeeist on July 2007. Tried at PP bottle shop with Sean, Tim, and Ryan. Lots of carbonation. Yellow color. Some interesting aroma like corriander, but not quite. Very dry. I prefer some sweetness. A hint of sour. Maybe a Brett finish? Side by side with Golden Delicious, which is much better.7,3,5,3,14:3.2 Rerate at alohaCs 2008 end of year party: 8,3,7,3, 16: 3.7

Pours a beautiful and barely hazy (at least in the first glass) glowing gold with a lovely and long-lived white head. The aroma on this beer is absolutely stunning; I’m very tempted to give it a 10 but I’m going to show restraint. Powerful blast of pear and tropical fruit (pineapple, passionfruit, etc.) mingles with spicy yeasts that recall a high ABV saison e.g. Avec Les Bon Vieux, a definite sourness, a hint of rising dough, and time after time the nose doesn’t fatigue, the aroma carries its full weight even after many sips and deep inhalations.

Flavor is neither as sweet nor as sour as the aroma might suggest; while not exactly dry, you get a nice tripel dryness. Doughy malts, that peppery yeast, oily herbal hops, drier tropical fruit juices, honey. Lingering aftertaste of both the honeyed pineapple sugars and the bittering hops. Nice mouthfeel, not hot, abundantly but not overly carbonated, full bodied.

Splendid, engaging, out-of-the-ordinary beer that doesn’t try hard to be different -- it just is.

75cL bottle courtesy of Lukin013 at Pittsburgh gathering on 1/27/08. Hazy golden yellow with huge rocky foam, great retention. Aroma is big and estery, a good bit of green skinned apples with a noticeable sharp hoppiness. Big and fruity flavor at first, leads to some nice hop bitterness and finishes with very dry with more apple in the finish. Alcohol is very well hidden, a fantastic US brewed triple.

The aroma was citrusy with hints of honey and saaz hops. The beer poured a beautiful hazy golden copper with thick lasting head and lacing. The flavor was wonderful with honey, saaz, caramel, citrus, and cloves. The mouthfeel was light bodied with great carbonation.

Bottle. Beautiful citrusy, American hoppy nose with a twinge of mango and tropical fruits. Pours a clear golden with a thick white head. Very nice. Flavor starts with pale malty sweetness then a burst of citrusy, lemon mango hoppiness. Light grass. Moderate bitterness level but abundant hop aroma and flavor. Well-attenuated. Lovely medium body with lively carbonation. No fruity, estery, clovey yeast aromas in this beer. A unique, American take on a Tripel. Great beer.

750ml bottle from NYbeer. This beer has a fantastic aroma. Honey, some dusty and wet hay, tropical fruit, bread dough. Very nice and unique interplay of malt, yeast and hops. Pours a bright hazy gold with a fluffy white head that doesn’t stick around for too long. A fine amount of of yeast particulate and tiny carbonation is present as well. Well balanced on the tongue as well. There’s a overriding yeasty spice presence with underlying notes of honeyed malt, pineapple, mango, zesty hops,, tart apples. Quite nice. Firm on the palate with excellent carbonation. Finishes with a zesty yeasty and hop finish. Can’t wait to try the Golden Delicious!

Poured a crisp golden color into the trappist glass with a huge fluffy, white head. A very pleasant scent; honey, apples, passion fruit, hops and spice. The flavor was excellent with tropical fruits, mango, grapefruit and some nice hops. I loved the mix of the classic belgian tripel style and the way the hops were still very noticeable and flowery.

(750ml bottle) Pours a cloudy golden body with a tall dense long-lasting white head. Aroma of orange peel, mango, light florals, and light pineapple. Flavor of floral/grassy hops, orange peel, dried mango, light apple, some apricot, and spicy yeast.
