Commercial Description: A semi-sweet traditional mead made with a floral blend honey that has a higher alcohol content and significant oak character. Look for sweet, fresh cut grass and mixed fruit in the nose. Toasted oak and citrusy characters up front followed by oak tannins and alcohol in the finish.
Dec 11, 2007 Aromas of rich honey, pineapple and shortbread. The nose on this mead is very similar to a popular mead from Weston, Missouri. Perhaps they use the same yeast.
The mead presents a pale straw color, good clarity, heavy legs, highly reflective meniscus, and a solid two-ring variance; all attesting to this meads solid structure.
This is not a complicated, complex mead, thank you very much. This is a traditional mead as it should be. Prominent honey, flinty mineral after-taste with a very long finish. Semi-sweet but not cloying, clean, and layered flavors. The mead’s naturally occurring acidity provides a drier perception on the palette and enhances the balance.
After evaluating this mead on its own merits, we finished the bottle with Thai food. The mead paired really well with fresh rolls, hot and sour soup, and Thai green papaya salad.
This is a fun and versatile mead that is equally at home with Thai food as it is with Crème’ Brule.
