Aroma is sweet dark cherries and bourbon, vanilla, caramel malt and more subtle dark fruits. Flavor is sweet and starts with a decent dark caramel maltiness, dark chocolate, bourbon and cherry. Pours a thick, near opaque with a thick off white head. Tart cherry skin, oily roasted malt, charred wood, tar. Slightly rubbery. Chewy and slightly acidic. Sweet and sour cherry chocolate flavor. The cherry is very retro nasal, getting intense in the sinus but the flavor is actually fairly subdued. Light in body. Smells like a chocolate-covered cherry with roast malt in the background. Very smooth and elegant flavor - Chocolate, cherry, and a touch of oak; in the finish some bourbon comes through but it’s accompanied by complimentary cherry sweetness as to not overpower anything. The finish is also balanced by some acidic roast but not a lot. Overall this is a very good cherry stout - clean alcohols and no one overpowering flavor. Taste and aroma are of bourbon, vanilla, oak, cherry, and light chocolate. It’s like eating a cordial cherry while downing a shot of bourbon. Finish is a bit on the thin side and alcohol is slightly present. Overall, not bad.
