Commercial Description:
Produced utilizing fresh honey without the addition of artificial flavorings, concentrates or artificial colorings. Even though greater production difficulties occur because pure, raw honey is used for fermentations, the intensity of flavor generated through this technique is worth the effort. Exhibits a richness similar to a fine liqueur, this dessert-style beverage is not fortified, hence, it should be consumed shortly after purchase to enjoy its natural and rich honey flavor. Chaucer's Mead can be enjoyed in one of two ways, either chilled or heated with spices to create a delicious wintery drink. The honey is produced in hives throughout Northern California and is composed of a blend of three types; orange, alfalfa and sage. Each of these components brings a unique quality to the blend and contributes to the overall complexity. Orange adds a pungent orange blossom flavor and has light color. Alfalfa is neutral in flavor but yields a dark, amber color. Sage, on the other hand, has a mild taste and a light color.

Offered to me at a dinner party, chilled. It had that cider light gold hue with little head. Aroma definitely had those honey notes and a touch of rice and alcohol. The flavor was similar with a slight alcohol burn. I like the sweet honey touch. Not bad.

Pours pale, clear gold with no head, coats the glass a little when swirled. Aroma is honey comb, ethanol, apple pie filling and a little cedar. Flavor is honey comb, yellow apples, sweet green grapes, light earthy spices, there is a lightly, acidic, vinous quality about it that I cant quite put my finger on as well. Finishes with a little spice and chewed honey comb wax. Palate is medium body with a dry entry and slightly slick finish. I thought it was a little cloying, but otherwise an interesting drink, that wasn’t hugely enjoyable, but might buy again.

Bottle. Poured a lighter shade or golden more like a cider with no head. Aromas of honey and light alcohol. Sweet flavor of honey and apple. Medium body, smooth. Not very exciting but enjoyable.

My first ever mead didnt no what to expect Pours very pale with no head. Looks like apple juice. The aroma is a very sweet honey, some apple and spice, and a bit of alcohol. The flavors are very much like the aroma with the apple and honey taking turns vying for my attention. Amazingly the sweetness that ensues does so witout leaving a thick syrupy character. This was nice.

Clear w/ a pale yellow hue. Yeasty, that-dry-powdery-bubblegum-you’d-find-in-packs-of- aroma. Medium, syrupy feel. Sweet flavour of bubblegum & honey. SWEET,SWEET,SWEET..yuck

Bottle. This is the only mead I can find in my area. Being the only mead I have ever tried, I have not much to compare it to. Smells and tastes very sweet. Honey is strong and obvious, so much that when you’re finished, the glass is sticky with honey. Goes down smooth with a very slight bite very similar to wine. I am very fond of this and hope I can find other kinds with more varieties of flavor. Could be a bit drier, but AMAZING when heated with mulling spices.

In a night of wine, I was given a reprieve with mead. Bottle from a friend of a friend of the the family of my girlfriend. Pours yellowy with no head. Nose is sweet and light and nice with a lot of honey. Taste is sweet, light, and smooth with a basic honey flavor.

750 ML bottle: Pour is light yellow/golden with a nice sweet wine-like aroma. A nice sweet blossom honey warms the throat after a light bodied, sweet drink goes down. Very smooth and very well balanced. I enjoyed the wet finish on this one. I believed it suited the mead well. My bottle came with spices. Watch out. Their contribution to the mead is fast and unforgiving. I definitely prefer the mead on its own.
