Commercial Description:
Bottle Conditioned.
Ingredients: Pilsner malt (French barley from Champagne) & caramalt; German Hallertaur & American Galena hops. Yeast & sugar added to the bottled beer.
Chimay Rouge (Red) is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

A pleasant beer, with caramel flavor, nice color and good maltiness. Too much carbonation, though. I would like the opportunity to try this one on tap some time.

My favorite of the Chimays. Not too strong (like the Blue) but still with most of the complex character. Been having one of these every so often for 20+ years. Always a winner.

Murky amber/red, little beige head. Flavor a bit yeasty, malt and grass. Faint aroma, might’ve been served a little too cold. No alcohol in taste or aroma. Lovely soft feel.

Bottle brown, 330 ml
Appearance: Pours mahogany brown, slightly reddish, totally opaque, not see - throught, muddy in colour and texture body, carbonation of the body is rather weak and natural in origin, head is beige, cappuccino like, slight lacing, initially medium, quickly decreasing to small but still lasting, very strongly yeasty in sediments.
Aroma: Strongly yeasty, winy, very well pronounced notes of red, fresh fruits like red currant, wildberry, red grapes, cherry, plum, notes of peanuts and wallnuts, very fresh and juicy, quite strong and essential, slightly woody and some strange notes of spicyness giving mixed reception and varing opinions, dry autumn leaves, dirt, well aged and quite ripe but all in all not that multidimensional as expected, powder sugar, some notes of English and American hops, very Dubbel like.
Flavour: Very strong taste in overall impression, very focused and nice, strong bitterness, very dry, some Crystal and Pilsen malt, leavy hops, great aftertaste, very warming beer with long lingering finish, very mellow, yeasty texture, thick because of yeast, perfectly hidden alcohol but contributing to the fantastic warmth in the aftertaste, notes of red fruits, wallnut skin bitterness, winy, red wine grapes, plum, cherry, Porto wine, very robust, kind of tangy, very spicy, great flavour as compared to its appearance and better but still not that good aroma.
Palate: Body is medium, texture is dry, carbonation on palate is low, finish feel is spicy, warming alcoholic, juicy, fresh, clean, highly astringent.

Bouteille 33cl. La Chimay "brune" est en fait ambrée et assez classique. Un gout acidulé reste en bouche et doit provenir de la levure sachant que cette bière ne contient pas de blé. Un peu déçu par le corps, l’alcool est très peu présent, bière relativement sèche finalement pour le style. Belle couleur et belle mousse.

750 mL bottle from Trader Joe’s (Hillcrest). Trader Joe’s seems to have the best local prices on Chimay -- $7.99 for red, $9.99 for blue. Pours a dark rusty red with a thin layer of off-white head. Aroma of malt, yeast, and dark fruit. Sweet taste of malts along with yeast. A slight fruitiness and some spice in the finish. There is something distinctly earthy here as well. Not terribly complex. Good carbonation. Probably my least favorite of the three Chimays.

750mL bottle, gift for 21st birthday. I warmed this one up a bit. Pours deep hazy red/orange, sediment came in the second pour from the bottom. Tan head. A strong caramel malt note in the aroma, bringing with it some raisin. Hops are detectable on the aroma, which I like. Feels spritzy on the tongue, that raisin fruit comes in first, followed by a relaxed hop bitterness which slowly fades to the astringent finish. Quite enjoyable, and not overly complex, i could have two or three of these. Very nice.
