Commercial Description:
Bottle Conditioned.
Ingredients: Pilsner malt (French barley from Champagne) & caramalt; German Hallertaur & American Galena hops. Yeast & sugar added to the bottled beer.
Chimay Rouge (Red) is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Clovey raisin spice, some fresh dough. Cloudy deep amber, big head with nice lacing. Orange peel seared in honey sweetness/bitterness flavor, funky bitterness. Medium to full body, creamy big carbonation, strong and long finish. Solid beer, great complexity, just enough alcohol to keep it approachable.

Some dark foggy yeast and faint raspberry. The bottle gushed a bit upon opening, though did not have an overactive amount of head in the glass. The head was weak in body and fell quickly. The body is a picturesque amber, nicely dense with sedimentary goodness. soft gentle ripe plum and blackberry notes, rounded out nicely. Light on the palate. more dark fruits, i’m getting the apricot now, finish is pretty abrupt after all that sweetness. Some leather too.

Bottle at home. Another fantastic beer. Chimay is really excellent for such a commonly available beer. Foamy head and very nice aroma. Prefer the white, by a hair.

Bottle. I think I got an old bottle because there were some floaties and sediment that were suspended after the pour. Other than that, this was damn tasty. Nose is malty and gives off some nice light fruity accents. Flavor is very smooth and malty with flavors of some dark fruits, maybe a little molasses flavor, and low bitterness.

Sweet aroma like maple syrup, strong alcohol. Some yeast and fruits like apple and plum. Boysenberry in the flavour along with a pepper spice, yeast and alcohol. Very nice.

(Old notes). A good belgian dubbel. Sweet, fruity, burnt sugar notes. I also found orange peel too. A good beer from Chimay.
