Commercial Description:
Bottle Conditioned.
Ingredients: Pilsner malt (French barley from Champagne) & caramalt; German Hallertaur & American Galena hops. Yeast & sugar added to the bottled beer.
Chimay Rouge (Red) is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

(bottle) pours a hazy, ruby-amber colour with a tall, frothy off-white head. aroma of sweet spices, notably cinnamon and heavy clove, wonderful notes of bread and subtle hop spices, light alcohol, caramel. flavour of subtle dark fruits, grainy wheat, light sweet spices and alcohol. full body, with strong but smooth carbonation and a warming, bitter finish.

750 ml. bottle. Pours an exhuberant, short lived head, with minimal lacing, over a reddish amber body....nose of sweet malts. some yeast with a bit of grapefruit....tastes of malts, over all rather dryer than expected, finish is of mild hops.....mouthfeel is very light. I know this is true to the style, and very well balanced, but I am afraid I am not that much of a fan of dubbels given my scoring. Such is the burden of the beerista.

Good head on pour which settled doen to a 2mm coating after a couple of minutes. Dark orange/ brown translucent colour with visable yeast remnants (Couldn’t wait to let it settle.) Enjoyable yeasty flavour with sweet suagry feel. Recommended as a winter slow drinking/ appreciating beer.

Presentation: It was poured from a stubby brown 11.2oz bottle into a signature Chimay chalice that came with the gift set. Appearance: It has a deep burgundy color with reddish amber highlights. The body has a light haze with a few small bits of yeast suspended in the liquid just above the bottom of the chalice. Its head builds up tall and thick with a creamy off white colored head. The head slowly recedes to a thin wispy covering that hangs on tell the finish and even leaves behind a small amount of lace. Smell: The aroma has a pleasing dark sweet malt character with lots of good fruity esters and earthy Belgian yeast. There is a slight phenolic presence as well. Taste/Mouth feel: There is a good sweet malty body that is full of fruity notes like apricot, dates and plums that mixes with some earthy yeast. In the middle there is a very slight astringency. It also has some light herbal hops spice and a pleasant alcohol that adds depth and warmth. In the finish the sweetness fades off giving way to dry earthy yeast. The texture is smooth with a slid medium to full body and well balanced carbonation. Notes: This is a very solid Trappist Dubbel and an absolute joy to drink.

750 mL bottle. Not as good as I remember this being first time I tried it a year ago. Pours a dark hazy orange with a two finger tan head. No lacing though... Nose is flowers, cloves, dried apricot. Taste is like a witbier dunkel if one existed: bananas, spice, yeast, and a tang of citrus hops plus some brown sugar and alcohol notes. Long, neutral, bubbly finish that brings out some chocolate covered raisins. Excellent, but I remember it being so much more.
