Commercial Description:
Bottle Conditioned.
Ingredients: Pilsner malt (French barley from Champagne) & caramalt; German Hallertaur & American Galena hops. Yeast & sugar added to the bottled beer.
Chimay Rouge (Red) is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

I’m sad I didn’t get to try this by itself. Someone had it at a homebrewers meeting and I tried it but it was one of the last beers I tried, along with all that great homebrew. I didn’t realy get to experiance the totality of the Chimay Red. It was good is all I can remember or say.

Pours a rich mahogony color from the bomber with a thick off-white head of foam. Loaded with yeast, raisin, and hops in the nose with notes of caramel in the flavor. A bit too high in water content for my taste, but a respectable beer all the same.

Bottle from Oddbins. Very effervescent and this makes it almost impossible to pour clear. No matter, it still looks great. Initially large off-white head fades rapidly to a thin veneer. Yeast and rich raisin fruit in the nose. There’s a surprisingly complex bitterness and sweetness that eventually reveals an intense spiciness. Very mellow lasting finish. Like the Blue, adding the sediment gives an extra dimension. This beer is an absolute joy.

Bottle. Pours a cloudy brown with massive head. Aromas are fruity, yeasty and sweet. Flavor is pretty darn nice, but mouthfeel is thinner than I expected. ABV makes itself known with a little bit of a warmth that seeps through the thick fruit and candi sugar sweetness that dominates the palate until the yeast flavors can take you down the home stretch.

Bottle 33cl. Pours a clear red colour with a normal size head. Aroma is rich in fruit, mals, hops and east, very well balanced. Taste is also greatly balanced, some flavour as smells. Good Dubbel.

very nice brew, copper colour, carbonation evident but not disruptive of flavour. A lot of malty caramel notes with mild fruitiness in the flavour. Very nice easy drinking double.
