Commercial Description:
Bottle Conditioned.
Ingredients: Pilsner malt (French barley from Champagne) & caramalt; German Hallertaur & American Galena hops. Yeast & sugar added to the bottled beer.
Chimay Rouge (Red) is noted for its coppery colour which makes it particularly attractive. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

330mL bottle poured into a Chimay goblet. Cloudy copper color with not much head. There is a nice sweet smell of raisins, molasses, and yeast. Medium mouthfeel and flavor is of fruits, malt, and yeast. There is a bit of bitterness to balance it out. This is quite drinkable at 7% abv. Overall a great dubbel.

Everyone has heard of Chimay and for good reason, it is a great beer. Nice interplay between different elements while staying balanced. Great flavors.

Very deep, rich, dark amber color. Smallish creamy white foamy head. Decent, but minimal, retention. Almost no lacing. Big caramel notes on the forefront. Deep, dark fruits that are just a day away from being overripe. Nice, rich malt profile. Nice yeasty quality. Taste is pretty light, compared to the nose. Nice malty presence, though really not very sweet. Quite earthy and yeasty, actually. Possibly over-carbonated, IMO. Mouthfeel is creamy enough, but nothing to right home about. The overdone carbonation really hurts it, I think. I would think of this as a good ’starter’ dubbel. My least fave from Chimay.

Murky dark brown beer with a rich, beige head that leaves a huge amount of lace behind. The aroma has some crunchy sugar, fruity hops, vanilla and banana. The taste has a lot of syrupy malt, a little iron and bittery hops.

Bottled 750ml. Murky Orange brown. Tan head, never disappearing. Aroma is citrus and salt water, caramel, yeast, fruits (specifically apples and banana), alcohol, and chocolate. Flavor is yeasty and apple/cider fruity, booze, roasted chocolate. Ends clean and delicate and inexplicably floral; always lacy.

It poured a dark hazy reddish liquid wiht a medium sized dirty white foam that dissapeared very fast. So fast it dissapeared before I had a chance to take a picture of it. It had a sweet smell of caramell, spices and wood. The mouthfeel was fairly smooth with a medium amount of carbonation. It had a medium body and a low bitterness. It had a sweet taste of caramell, vanilla, tea, sugar and wood.

A: Poured with a small, off-white head, but what was there actually stayed there for most of the time while I was drinking the beer. Body is a nice, light brown, like melted milk chocolate... almost a dark ruby red. Cloudy body. S: Very nice aroma of malty breadiness, with hints of cloves and banana as well. T: Quite a sweet flavor to this beer, but it’s not sickening or cloying... not a bit. The cloves and banana are present, but nicely in the background. A fantastic-tasting beer. M: Medium-bodied with a creamy texture, and a quite fizzy carbonation. D: Wow, this is an excellent Dubbel. Definitely goes down easy with hardly any trace of alcohol. Something I could sip on all night if I had the opportunity.
