Banana aroma. Lively and complex. Very flavourful and fruity. Peppery. This is an old favourite I have not sampled for far too long. A dry, very dry almost medicinal or herbal beer, and as such an unusual trappist. Comes in the neighborhood of Orval but far from that beers complexity. A bit too bitter for my liking. 180893

Dry palate with just a hint of sweetness. Dusty yeast leads, followed by peppery alcohol. Moderate bitterness. Not bad for the style, and a fairly strong earthy hop character. Well-made and cohesive if somewhat short of scintillating. yespr (6400), Copenhagen O, Denmark Sep 16, 2007 33 cL bottle. Pours hazy orange with a huge huge off-white creamy head. Lovely spiced yeasty and caramel malty aroma. Soft caramel flavoured with a small spice note breaking through in the beginning. Goes into a more yeast and spice dominated flavour. Ends slight bitter and spiced. This is by far my favourite chimay and one of the best belgians of all.
