Commercial Description:
Chimay Blanche (White), with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer's flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Much preferred the Red to this but still an excellent ale - the Blue is next. Clean, slighlty fruity aroma, nice cloudy nectar-like appearance. Gets better as it warms - more subtle flavors such as raisins come through. Strong to the finish. Good way to wind up the weekend with a steak dinner.

Bottled(330ml). -the best Chimay, hazy yellow-orange coloured, creamy white head, crisp and clean mouthfeel, great hoppy and fruity aroma with excellant spicy notes, pleasant yeasty and fruity finish

Hazy gold with a firm white head. A trace of sediment. Yeasty aroma with a background sweetness. The taste is more bitter than I expected. At first this was a surprise, but I began to appreciate the combination of dryness and spicy yeast more and more. This would be a good introduction to Belgian beer for someone, like me, brought up on traditional English bitters.

Draught at Tyler’s in Chapel Hill. Hay golden color with white head that laced the glass Chimay goblet it was served in. Yeast, alcohol, and citrusy hop aromas. Yeast, alcohol, and dried apricots come out in the flavor. Slight hop bitterness.

Beer 14 of O’brien’s Trappist Tasting 2/3/07. Pours gold and bubbyly with a thin white head. I noticed almost no smell, but maybe its because of where my sample was for the bottle or who knows. The brew is sweet and strong but not so amazing.

Cloudy light brown color with huge long lasting head. Fruity aroma with some spicyness in there too. Flavor was totally different from aroma: strong carbonation biting in start and hops making flavor and after taste to be very bitter and lasting. Ending is very dry and some grassy flavors can be noticed too. Full bodied palate with some alcohol taste leaving warm feeling to mouth. Seems strange but I rated this White version to have points than more popular Blue one, but it’s not a mistake. This is my favourite Chimay.

Good pale colour with a nice head. Spicy triple taste, with a fresh palate.

All three Chimays that you normally find are all really great beers. Just plain delicious.
