Commercial Description:
Chimay Blanche (White), with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer's flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

I started off with he intention of rating a bottle of ’best before 2001’ chimay white but decided to taste it alongside a ’BB 2004’. First 2004 was soapy from yeast autolysation so I opened a second bottle of 2004. The difference between 2004 and 2001 was incredible. Fruity, sweet malt and bready aroma and something else I just couldnt put a name to. Visualy the two where hard to tell apart, but the flavour in the older bottle was just so much smoother and rounder. If youve got the patience it is certainly worth cellaring a bottle of white for a couple of years.

Very big long lasting head. Nice coppery orange in the Chimay chalice. Lightly spiced aroma with yeast notes. Clean and smooth. LIght dust notes on the tongue. Interesting and lasting dusty hop finish. Can feel the alcohol in your nose. Excellent.

nice laid back aroma, vanilla, fruits, when warming up a bit i got something roasted too. could be more powerful. hazy golden with large thick head. nice flavor. very well balanced. i get honey, sugar, little bitterness. RB rating too high imo, but it is well balanced.

Bottle. Sweet aroma - apple, peach. Orange tan color with small head. Light peach/apple flavor with moderate acidic/astringent finish. Subdued but sublime - a great beer.

In the 330 mL bottle from Beertopia. I’m surprised that I had not rated this one before. Lucky for me that Beertopia breaks up the holiday pack and sells these individually. Pours deep gold with an enormous concrete-like off white head. This head stays rock hard throughout the drink. It is almost a solid. The aroma is mildly fruity, but also has a bread dough scent like the baking of rolls. The flavor has a mid point sweetness that gives rise to a big orange peel bitterness on the back of the tongue that just sits there and gouges you. Plenty of black pepper on this one as well.

Medium offwhite head. Hazy, dark orange body with yeast particles. Sweet bready, yeasty aroma with strong fruity notes (banana?) and spice. Taste is sharp, sweet licorice and spice with bitter background. Dry, light, spicy aftertaste. Spicy taste lingers. Very, very good. A world classic. (0.33 bottle.)

Golden/orange and hazy with a creamy big head. Clean aroma of spices, malt, apples and alcohol. Quite bittersweet in flavour. Malty flavour of oranges and and honey. Dry bitter finish with strong notes of grapefruit.

An excellent, complex aroma. Brown sediment on the bottom of the glass. Citrus and other fruit, as well as light floral aromas. Gold, with a large head. The flavor is very sweet; with dried fruit. One of the best aromas I have found in a beer, and a great example of a sweet fruity tripel.
