Commercial Description:
Chimay Blanche (White), with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer's flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

On tap this pours a hazy golden color with a medium long standing white head that leaves nice lacing behind. Spicy crisp aroma of corriander, clove, bread, and citrus fruits. Very well balanced with a lot of crisp/dry snap to it, citrus flavors throughout with some orange peel and spice in the finish. Great brew that is very floral on tap.

I prefer the Bleu as well. This one was OK, but I think the astringent flavor was a bit much.

Bottle. Cloudy orange with sediments and a big, creamy white head. Sweet nose is characterised by yeasty spiciness and coriander. Sweet and spicy flavours, coriander together with banana and clove, good bitterness, giving a dry finish. Full-bodied with warming alcohol. It may have become diluted and commercialised recently, but it is still a great beer.

750, corked and baled. Pours medium coppery amber with a towering, bubbly platinum-blonde head. Ample lace on the way down the glass. Crisp but mild nose of hay and lemons--understated and lovely. Nice lightish medium body, super clean and drinkable. Bit of sharpness to the mid-palate, seems to be from the hops. There’s a nice herbal hop cling to the finish. This is a crisp beer in every way from popping the cork to the last swallow. Wonderful stuff and a world classic that’s more than earned its lofty reputation.

Bouteille de 330 ml obtenue via Importations privées Bièropholie. Arôme: Odeur d’houblon et d’épices. Apparence: La couleur est blonde pâle voilée avec une forte densité de bulle. Présence d’un énorme col mousseux avec une fine dentelle sur le verre. Saveur: Goût d’agrumes, d’épices et d’houblons. La durée de l’arrière goût est moyenne. Palette: Le corps est moyen avec une texture crémeuse. L’effervescence en bouche est forte. Présence d’amertume en arrière goût. (Rating #319)

Clean, light and effervescent mouthfeel; almost champagne-like in a way. Gentle spices come through as the beer warms. Malts are soft and dough-like. Finishes somewhat dry, bitter, and a little oily. Enjoyable beer, but it doesn’t seem to have as much character as the blue or red.

Cloudy orange amber, massive head, long lace. I can’t decide whether it was berries or flowers that I got on the nose, some citrus zest too. I only got two sips of this beer then returned from the BBQ to find that my wife finished it! I’ll need to taste it again to really analyze its complexity, but up front it was sweet and yeasty with some spice, and a nice bitterness contributing to a fine balance. I enjoyed my two sips, but I need more time with this beer.

On Draft - Tampa Bay Brewing Company. Poured out yellow in color into a goblet with tall bright white foam head. Malt, spice and yeast aroma. Soothing Malt, spice and yeast flavor balanced somewhat by the citrus hops then slight bitter/sour finish. Carbonation was low for a Belgium beer which created the soothing mellow mix of flavors. Very tasty and refreshing. Didn’t sense any alcohol.
