Commercial Description:
Chimay Blanche (White), with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer's flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

I’m quite partial to Chimay white. Refreshingly simple character, clean dry finish, mild bouquet, hazy appearance, and good mouthfeel (tho at times a little gassy) but with a killer yeast profile that totally removes it from sweet tripel hell and takes it more into the realm of saison. Welcoming, quenching, accessible beer.

A beautiful sight in the bour, golden and arimatic, with very vibrant carbonation, that is especially entertaining to watch it disperse the yeast throughout. Creamy fizzy head, that lasts and lasts throughout the drink. A faint echo of hops is present, with a floral fruity bouquet that is very refreshing. Very pleasant on the palette, from the flavor and the aroma.

My favorite from Chimay, It does not have the overbearing malty sweetness that some Belgian Abby/Trappists have. Some have called it a ’pale ale on steriods’, or maybe a Belgian interpretation of an IPA?

This got better as I got to the bottom (having already had a Chimay Rouge before it, is there any wonder?) but there were some elements that prevent this from reaching the stratospheric levels that ten years ago I might have expected of ’Chimay’. Head is not as rich as the Rouge and the alcoholic essence is a wee bit overpowering here. The palate, too, is slightly askew--too much carbonation. I liked the hint of floral/fruit in the flavor, as well as the yeastiness in the aroma. No doubt, enjoyable--my rating is being extra critical--there are no fundamental flaws with this beer, just nagging doubts about its composition.

750ml Bottle: Aroma of yeast, spices, pepper, cloves, and a little syrup. Poured orange/amber in color with a huge, foamy, rocky, off-white head that lasted throughout. Cloudy. Sparkling. Lots of medium-sized floating particles. Medium bitter flavor. Tastes of pepper, cloves, yeast, and some caramel. Medium body. Average texture. Lively carbonation. Pepper finish.

(Draught at Akkurat, Stockholm, 14 July) Colour is pale amber, with a huge, but disappearing, head. Nose is fruity and spicy with notes of apricots, citrus, mandarin, orange peel and lots of spicy aroma hops. Taste is fruity and hoppy with notes of citrus, marzipan, dried fruit, some yeast and a nice spicy hop character. Inititial alcohol sweetnes, drier towards the finish. Tasty and very nice.
