Commercial Description:
Chimay Blanche (White), with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer's flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

(Draught at Akkurat, Stockholm, 14 July) Colour is pale amber, with a huge, but disappearing, head. Nose is fruity and spicy with notes of apricots, citrus, mandarin, orange peel and lots of spicy aroma hops. Taste is fruity and hoppy with notes of citrus, marzipan, dried fruit, some yeast and a nice spicy hop character. Inititial alcohol sweetnes, drier towards the finish. Tasty and very nice.

Finally got around to trying this, mostly because I got a bottle from my secret santa - amber/gold/straw color with lasting lacework - kind of dry, hoppy, spicy, earthy farmhouse ale qualities in the aroma - soft on the palate - semi-dry and more hoppy than I was expecting - biscuity, bready malt, and only a touch of the fruity esters usually present in the style - a unique twist on a normally uninspired belgian style.

One of the most unique beer on the market this one is my favorite of the Chimay beers. A little lighter than its Red and Blue brothers but all in all a more balanced beer. A wonderful beer to serve with just about any meal.

Re-Rate 11/22/02: A pellucid amber color on the pour, the head is large-scale, the lace filmy fine sheets that cling to the “Chimay Chalice”. Nose is malt, hints of citrus and lightly sweet, and quite pleasant. Start is malt, somewhat sweet, the top squinny, the finish is medial in carbonation, the hops pronounced, the aftertaste bone dry. Of the three “Chimay’s”, this is my least favorite, great in its own right, just not my personal favorite, but well worth a sample if you have not.

You can’t drink this too cold, or it’s acidic. When it is a wee bit warm, then the pineapple/apricot aroma and flavors come through. Dry, tart, earth-grassy. Aftertaste hangs around, but it’s not bad. Tall, stiff, crystal white head. Peachy-gold and cloudy. Steal some yeast off the bottom of the bottle for your homebrew.

Golden beer with a tall and foamy off-white head. Cheese, hay and yeast in the aroma. Taste is quite mild for a tripel. Hay, yeast, cheese and spices. Hides the alcohol well. A good tripel!

Exquisite, dry, doughy aroma. I get a hint of spiciness, perhaps cayanne, along with savory spices. Not getting much complexity, but still very nice. Pour is excellent into its own glass, with a large, rocky head that laces well. Pretty dark for a tripel.

Flavor is quite nice as well, kind of dank and boozy, more vineous and ever-so-slightly sweet. Less dough and more subtle malts. Again, not too much complexity. Very enjoyable, this. Glad I finally hunkered down and bought some.

Slightly hazy amber color with a large rocky off-white head. Arome of sweet spice with some fruit in the end. Flavor of fruit, some banana and some citrus bitter in the end.
