Commercial Description:
Chimay Blanche (White), with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer's flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.
Ingredients: Water, malted barley, wheat starch, sugar, hop extract and yeast. See Protz and John White

Wow! Isn’t this kind of Belgian wit-ish? I see in others’ reviews lots of orange, coriander references, and I agree, and those are usually qualities in a good wit, right? I loved this one. As different from the Bleu as can be, yet a gem in its own right.

Pours a hazy light amber into a Chimay glass. Thick microbubble head. Citrus, bread, dough and yeast aromas. Full and creamy with up front dried fruit (but not strong) and a dry, bitter, lasting finish.

Bottle. Orangeish pour with one finger fluffy head. Nose is super yeasty and hoppy and has hints of bananna. There is alot of carbonation. Taste is yeasty (like fresh bread dough) with a touch of alocohol. There is some spice in there, and it adds a great flavor. There are some strong floral notes that mix really well with the spice. Overall taste is a great balance of black pepper, hops, malt, and yeast. Finish is sharp, spicy and slightly bitter. I am not a huge fan of Chimay, but this is the best of the three IMO. Not my most favorite beer by far, but a good beer. If you are like me and think that Chimay Red and Blue are too chewy, try this one. It is much more balanced and easy to drink than the other two. I would LOVE to try this on tap!

Cloudy golden pour with a billowing cream colored head. Small brown floaties. A nice yeasty nose and a heavy bready spiciness. Sharp on the side of the tongue. Dry and creamy with a lasting hop finish. I’m a fan of the more subdued spiciness in this one.

Murky amber body with white head. Aroma was interesting. Banana bread. Maybe gingerbread. Certainly some spice and fruit tones. Yeast. Good creamy mouthfeel. Flavor was mildly hoppy, fruity, some sweetness. Not a preferred style of mine but not a bad drink.

On tap at Monk’s Cafe in Philly. Pours blonde with big bubbles that stick to the side of the glass, and a frothy white head. Aroma of yeast, clove, and some alcohol. Earthy flavor of wheat malt, clove, banana, pear. The alcohol blends in nicely to round out the flavors. Spicy and mildy sweet finish, some dryness. I really enjoyed this because it was it did not have the alcoholic bite that some tripels have, and there was some residual sweetness to tie everything together.

On tap at Milltown, Carrboro. Been a while since I’ve actually had this, and it remains delightful. Beautiful looking cloudy orange in a Trappist glass, with a healthy and substantial head. Lots of spice and a tad of citrus in the aroma, and the mouthfeel is quite lustrous. Awesome dry finish is a bit of a surprise, but makes this dangerously drinkable. Fine stuff.
