Commercial Description:
Chimay Blanche (White), with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer's flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

11oz bottle-pours an off white BIG head, cloudy golden/straw color. Aroma is a nice light malty, maybe yeasty too. Flavor has a nice bite, a little dry. Not as much flavor as I expected.

750mL: Golden orange hue, long-lasting 1cm white head, light yeast deposit. Very dry aroma with far less events happening than moinette blonde. Light alcohol touch provides a rather heating character, very herbal, moderately hoppy, grassy. Decent honeyish malt base on the tongue though it fades into an extremely dry finish. This wants to be westmalle tripel a bit too much for its own good, but it doesn’t even come close in the mouthfeel department where this one seems a bit overcarbonated, bubbly even and medium bodied at most. It certainly has an irony quality to it, or at least very mineralic, which I sometimes appreciate, but it didn’t seem to fit with the alcohol in here. Finish is hoppy, salty. Decent take on the style.

Different chimay from the other 2. Aroma is like grassey, stable yard, bready almost. Taste however is more wheat, corriander, carbonated and alcohol, while there is a good kick of hops at the end. In the general scale of things this is a good beer, but the other 2 from chimay are more to my style and taste.

This beer rocks. The hazy color of apricot nectar (my wife’s assessment). As with most Belgian ales, the nose hints of a skunk about 300 yards away...downwind. Also, a very fruity aroma. A very crisp, clean, spicy flavor with a dry, effervesant finish. Yum.

Dark copper orange color and a puffy white head. Rich bready yeast aroma with soft malty presence. Body is thick, sweet and complex, with everything from caramel malt to dark fruits and some spice. Finishes crisp and dry. Very smooth and balanced.

1999 vintage sampled 12/2007 - hazy deep and dark orange colour; big and creamy pale beige head leaving a nice lace; solidly bready nose with hints of apples and grapefruit below; very creamy mouthfeel, sweet and with a low carbonation; aftertaste of bitter almonds, honey and bread; quite dry and long lasting - subtle and charming (4/8/7/4/16)

cloudy dark orange colour with a giant foamy head and a beautiful lacing, esters and honey in the nose, notes of gingerbread, creamy mouthfeel, lot of carbonation, robust and quite agressiv bitterness, long and dry aftertaste of bitter orange

I really like this beer, and i’d go as far as to say its probably my favoured Chimay, soft floral aroma. Deep orange colour with a pillowy head at first fading to a thin head which sticks all the way down to the bottom. Dry, bitter orange peel flavour aswell as added spice and pepperiness and a medium to full body, smooth aswell with abitter aftertaste. excellent beer, lots of flavour.

(Draught) Amber-clear; white, creamy but small head. Grape-like nose, white-wineish. Sweet taste with herbal qualities. Bitterish "Belgian" type hops. No more fruity flavours, which I seem to remember. Retronasal a harsh metallic, stannum-like tang. If it weren't for the palate ruined by the metallic taste, medium to quite full bodied. Reasonably refreshing. The beer is quite good, not great. The finish is just awful. I'm pretty sure their modern brewing methods have partially ruined a once great classic.
