Commercial Description:
Chimay Blanche (White), with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer's flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.
Ingredients: Water, malted barley, wheat starch, sugar, hop extract and yeast. See Protz and John White

[little bottle] Dark yellow with foamy islands from the effervescent foci. The aroma is farmhousey with banana and dried apricots but not raisins; medium sweetness. Nice dry bitterness in the flavour that is woody-grape, though the flavour does contain a significant amount of noble hops, especially in the finish, which compliments a pleasant malt sweetness. Quite a bit of carbonation, with a light to medium body and perfect driness.

Bottle. Poured a cloudy gold with a large head. Aroma of spice and malt. Flavor of the same. Good beer and the easiest to drink of the three Chimay beers.

Bottle & tap on multiple occasions @ Café Gollem. Pale amber colour, white head. Aroma of hops and malts, some spices and yeast. Flavour is very malty, but nicely balanced by the hoppy bitterness and a slightly earthy/yeasty taste. Very smooth palate, soft and creamy mouthfeel. There aren’t many flavours in this beer, but the ones present are so well balanced that you have to love this brew. One of the best (if not the best) tripels.

Pours a amber brown color with a whitish beige head. Smells of dark fruit, yeast and hops. Slight touch of figs can be detected. Taste is slightly carbonated with bitter fruit and yeast domination. Not bad, but not up to par with the chimay blue. Alcohol is hidden well.

Bottle, 33 cl. Aroma seemed to have some skunk in it, a problem I’ve also encountered with other triples...not sure if that’s just coincidence or these brews are particularly sensitive to...something...anyway, otherwise some vague fruits/spices, nothing of particular, note. Flavor I think was best described by Odense below as more herbal than other tripels, which I agree was a nice change of pace, also a nice hop presence, particularly in the finish. Still, nothing wowing. Decent brew, I just haven’t been impressed by tripels recently.

750 into a trappist glass. Red is still my favorite, but this is also delicious! A very good tripel. Trying again on tap. Big yeast, cream, and esters in the aroma and taste. Good stuff.

pours hazy golden with a huge pillowy white head. yeasty, sweet and spicy(black pepper, coriander) aroma. malt has a honey-ish sweetness to it with more spice in the background. an excellent triple.
