Pour produced the signature hazed orange ale with the killer cap that stacks out of my new Chimay chalice...Moderate effervescence.
Very pleasing nose...all the spices and fruit and phenols are there...very complex...I will attempt to simplify by simply saying it has the aroma of a poached apricot ( flambeau) in candied-spiced brandy.
The aging went well on this bottle...the fusil and phenol tastes of a young bottle were subdued and the fully blended flavors came forward with a relaxed smoothness and mellow character.
Up front there was a lot of thick sweet malt which was balanced off with the fruit-herbs and spice tones leaving an impression of frozen cinnamon bun dough with tangerine slices, mid palate these flavors evolve into a more complex taste senasation which is more spice pronounced then the long finish where gradual drying takes place and the phenominal hop mixture shows up to complicate the end of this drink by peppering it with metallic-fruity-medicinal-herbal tastes which fight against the near cloying malts and sugars...everything in balance on this drink...very pleasurable to sip on...particualrly on this damp chilly evening...thanks Rob...wonderful birthday gift...thanks.

The taste is full of fruit sweetness at first and then balances quickly into a great yeast/hop aftertaste. The feel of the hops lasts awhile but is pleasant. Pour it into a Chimay goblet and you can see the constant stream of tiny bubbles eminating from the etching. Banana is the strongest aroma, but there’s also the omnipresent yeasty and mustiness in most Belgians, along with a subtle citrus and vanilla notes. This is slightly dry and bitter when chilled, but damn is it smoooooth when it begins to warm. Like drinking silk ... seriously. Sweet, spicy and peppery flavor. The alcohol doesn’t present itself until it hits the back of your throat, but even then, it disappears quickly behind a dry, bitter and smooth finish. The layer of fine bubbles lasts and last, slowly settling into a skim that coats the lips with each sip, all the way to the end of the glass. A rising bread aroma, with peppery, spritzy notes. Dry, spicy and warming, with a bit of lemon flavor. Very clean and bright. Amazingly etherial texture. So soft on the palate, it’s like sipping a cloud.
