Commercial Description:
Made from McIntosh apples. Dry cider aged in oak barrels for two years. Ancestral artisan quality with a tang of the Rougemont soil, enriched by the Jodoin family’s closely-guarded secrets. Fresh and harmonious aroma of apples with a long finish. A marvelous companion for strong cheese, such as Bleu. Excellent with pork, poultry, fish, and cold cuts. Very pleasant aperitif.

Thanks be to Cheeseman for the taste. It poured a clear yellow with little carbonation. For an apple cider, I get mostly a pear smell and flavor. Smooth and light on the palate with a sweetness that makes me want more than just a taste. I’m not much of a cider drinking, but this one is fabulous.

A quiet aroma precedes a full mouthfeel...Alcohol merges with the perfect sweetness/tartness balance, and bold apple flavors come through...Cohesive, flavorful and a little warming...

Pours a pale gold color, it’s mostly still, although scarce tiny bubbles can be found. Interesting flavor of baked apples and mild funk. Nice flavor of apples with lingering sweetness and mild funk, it also has a leathery character. Pretty good cider.

(750ml bottle) Thanks for sharing DumDum! Non-carbonated with a VERY clear lightly yellowed body. The nose is of cooked, acidic apples. Slight flavfour with bitter backing. Oak and fruity finish the palate prior to a watery alcohol diminishes the taste to nothingness.

Tart and spicy cedar-like aroma is very dry and lightly fruity. Sweetness emerges as it warms along with a subtle farminess. Very clear medium golden colour with nice legs on the glass. Nicely balanced between sweet and tart flavours with a light apple character. Medium body, still and somewhat astringent and puckering in the dry finish. Very enjoyable. Bottle (Marché des Saveurs - Dec. 2004).

Still white wine appearance. Strong aroma hints heavily on a woody alcohol I can’t quite pinpoint. Sweet and hot with mellow apples and honey notes. Oaky palateis again rather alcoholic, too much for what else it offers. Medium body doesn’t get too sticky. Sweet red apples hint, but not too elegant in its leathery woodiness and alcohol. A bit too much...
