Aroma is big candi sugar and a bit of yeast...roasted peppercorns. Flavor is also tons of candi sugar...very sweet...quite a bit of spice and grass taste...some malt too. Hardly any hops..and I don’t get any fruitiness from this? Mouthfeel is dense...kind of harsh actually. This is not a very good example of a saison...at least from what I have experienced. Fruity, slightly wheaty aroma of bananas, pineapples, wheat bread, light hops, light sugar and a touch of coriander. The body is much fuller than I would have guessed from the appearance. The carbonation was soft and rather supple on the tongue. The flavor is enjoyable and rather complex. The fruity esters and candi sugar lead to a higher sweetness than expected. The spiciness and light malt are nice together. The hoppiness could be a little more definited and a little more complex and it would make this much more enjoyable for my tastes. Nice small bubbles rise slowly up the glass like cheap plastic cork champagne. Nice subtle bread, wheat, spice, and a touch of clove. The flavor is nice and dry with toned down yeast and very mild spice. This beer does not try to hard and is very refreshing. Very little carbonation. Smell is spicy, some sweetness, but overall dry. Very transparent, no bottle conditioning with this saison. Palate is very thin compared to most saisons, pleasant though. Taste has some spice - coriander? cinnamon? Not much of the taste that comes with most Belgiums (or most US interprentations) - not very earthy in the malts or yeast. Boatloads of spice and bread on the nose with corriander to the extreme. This is a fine beer and as always with this brewery very impressive for the $$$. One of the better domestic versions of saison but lacks the dry hop finish I love in the Belgians as well as the earth toned malts. Moderate head. Lightly carbonated and medium body. Average Belgian style with an extremely sweet finish that covers the alcohol nicely. Still not one of my favorite styles but a decent attempt.
