Bottle conditioned.
Brewed with choice malts and an extended top fermentation. This naturally conditioned ale experiences interactions between the robust malt, hop and yeast characteristics, to exhibit an intriguing journey of flavour development over a period of five years when stored under cellar conditions.

(bottle -2008 vintage) Low carbonation, hazy copper-brown colour with some typical coopers ’floaties’. Warm alcohol with some syrupy toffee flavours. Almost no hops up front, but a bitter finish. If this is Coopers’ idea of a keeper, they should go back to the drawing board, mine was already past its best and had no outstanding characteristics.

Bottle. Caramel fruitcake with some licorice lacing. Rich flavours with a slightly mass-produced fakey feel.

Bottle (vintage 2008):Amber, hazy, lots of floaties visible, small and persistent lacy off-white head; fruity-vinous aromas detectable, molasses and a tinge of turpentine, too; stronger sweet-bitter flavour, nearly full bodied; moderate - slightly alcoholic and tart - sweet fruity and vinous finish, some hops detectable in the aftertaste. Quite O.K., but all in all also disappointing........

375 ml bottle. Golden body with a fine off-white head. Aroma of sweet malt, caramel and some ripe fruit. Flavor is sweet malty, some caramel, candy sugar, fruity and acceptable bitter finish.

2008 bottle, 375ml. Remarkable beer. Aroma has raisins, caramel, and also yeast, which gets stronger as you go. Flavour is complex and long lasting, with sweet notes dominating. Medium to full body, silky mouthfeel. Copper colour and white frothy head; it has yeast for bottle conditioning.

Bottle 2008 Vintage. Pours a murky orange / brown. Large off white head that disappeared pretty quickly. Not much lacing. Initial aromas of bananas and some fruit cake. Very thin palate Carbonation is a little too high. Flavors of caramel, toasted malt and a little fruit cake once again. Lots of hop bitterness on the end and a fair whack of alcohol. Balance is a little off for my tastes.

2008 Bottle. Light copper coloured pour with a very little off-white head and a little bit of sediment. Nose is quite sweet with notes of toffee, molasses, brandy and raisins. Flavour is less sweet than the aroma would suggest but still some sweetness. Fruitcake, toffee, brown sugar and malt are all noticeable in the mouth as well as a lingering bitterness. One of the better Australian interpretations of an English strong ale that I have tried. Would be interested to see how it holds up after a few years in the cellar.
