Pours clear amber brown with a 2 finger tan head which thins rapidly. Looks delicious and crisp! I smell maple syrup, dried fruit, nuts and buttered toast. There’s a hint of orange peel here too.
Taste is slightly sweet with a bitter middle and a dry malty finish. Nice complex transitions like a Widespread Panic jam session. The body is medium and slightly thin with great prickly carbonation.
Despite what I’ve read, this ale cellars quite well. I’ve been trying to clone this one for a few years but can’t quite match the complexity. I’ll gladly come back and humbly study the bottled wisdom of these monks.

hazy dark red-amber, with a good tall head in rocky flesh. Aroma is
sharp and kind of hoppy. Alcohols ring loudly, with a refined yeast
character beneath. Flavor puts forth a similar, kind of sharp hoppy and
phenolic yeasty (almost plastic like). Beneath the sharpness, there’s a
very mature, sophisticated raisiny malt character, some toasted
fruitcake, and strong brandy. The body is nice, playing between chewy
sugars and rising alcohols. Underneath the rather sharp yeast and
alcohol surface is a pleasant malt body. Decent, but a bit uneven.

S: Dark fruits, chocolate, molasses and spicy brown sugar.
T: Tastes just like it smells. raisins, brown sugar, and hints of chocolate, and a slight underlying sourness. Not much just enough to raise the complexity.
M: Medium bodied and bubbly.
D: Nice and smooth drinking beer.

Flavor is fruity, chocolatey, yeasty... Very dry... medium bodied, decent beer, but i wouldnt seek it out again over a beer ive yet to try....
