A resturant specializing in excellent food made from the local brew. E.g. ham with St. Bernadus Tripel. This beer is a light, filtered ale, which comes in a rugged champagne-bottle (like old classic gueuze) with a cork and no label. Incredibly fresh aroma, almost like flowers. Spicy, aromatic, slightly perfumed, but with an apparent bitterness. Quite a refined beer. Brings reminders of Popering’s Hommelbier. Read somewhere that this should be a blend of "Het Kapittel Abt" and "Watous Witbier". 280704 fonefan (11525), VestJylland, Denmark

| 3.6 | Aroma | Appearance | Flavor | Palate | Overall | | 7/10 | 3/5 | 8/10 | 3/5 | 15/20 | Jun 2, 2007 I tasted this one as Cuvée Carlsen on Carlsens Kvarter in Odense, Denmark on October 28.05. where the name is Cuvée Carlsen. It’s nice, hazy golden with a huge head. The beer is very lively. The aroma has notes of sweet fruit, and the flavour has sweetness and a lot of fruits, like melon and citrus in the finish. A nice one. Emil (6074), Copenhagen, Denmark

| 4 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 4/5 | 8/10 | 4/5 | 16/20 | Apr 8, 2003 Pale gold colour, slight orange hue. Abundant white head, stable. Cocos nose whilst pouring, very fine hops afterwards, a bit citrussy. Extremely nice hops-taste again, soft-bitter. Good balance. Mouthfeel is quite dry (I suspect candi-sugar), alcohol feels like malt whiskey with orange rind. No new aftertaste. Superb balance allround. This is a mixture of two beers from Van Eecke, and it's hard to believe Hommelbier is not involved. The alcohol from 't Kapitttel Abt, however, is unmistakable. Van Eecke blends this for 't Hommelhof, probably Belgiums' best beercuisine-restaurant. Hildigöltur (5109), København, Denmark
