Not sure but it was excellent all the same. The aroma was apples, honey, and christmas spices. The flavor is very sweet with some honey, almonds, spices, apples, and caramel. Aroma is mostly alcohol with a twinge of honey. The taste is as smooth as silk. Honey, burnt molasses and caramel. Tried this side by side with Apis Jadwiga mead and although similar, this was a little more complex and less sweet. Thanks Jeppe (BierKönig ) for this real gem. Dark amber clear, no head. Viscous. After a sip, it has legs on the glass like wine. Thick oily body, burning. Honeycomb sweet, with honey dripping down my throat. The taste is sweet and strong, and the palate is full of honey. Real mead, like this, has no head or ’bubbles’. Mead is great as aperitif or with the dessert instead of port wine or sweet white. Dazzling aroma of tangy plums, liquefied raisins, honeyed cane sugar, cinnamon, flower petals, wood, and perfume. Deeper wafts of cognac, herbs, ginger, and pear. Gritty, yet softly smooth texture. Initial clean alcohol burn blends with the remarkably bright floral and honey notes. Alcohol and unfermented honey smother most of the vague acidity. Crystallized sugar thrusts toward the heart and grits up the palate before a pungently leathery, sherry alcohol takes effect. Lavishly rich and complex, throughout, yet far from cloying, with a grassy herb tone underlying the sweetness. The alcohol continues to glow and highlights the cinnamon and candied ginger. Glassy alcohol in the finish dries it out and provides more brightness to the fruity backdrop. Plum, tingly alcohol (cognac), and clean wood remnants. Just needs a tad more acidity to partially deflect the sweetness and deepen this already-seductive Mead.
