Cask; Seasonal - Autumn and Winter.
Brewed with the aromatic Amarillo and Cluster hops, like a modern pale ale of the U.S. but balanced by distinctive Munich malt, which adds complexity and a hint of roasted flavours to the beer.

Pale golden beer with a tight white head. The nose is lovely. Lightly fruity with a kiss of light citrusy hoppiness. There is a nice spiciness as well as a bit of lemon and citrus. Soft crackery malt and a touch of toast. It’s a nice combination of US and UK ingredients, highlighting the best of both. Highly quaffable with a lovely lingering fresh hoppiness. A nice bitterness on the finish and even a touch of resin. Really tasty stuff.

Cask - The Butcher’s Arms, Herne. Clear, golden amber with a pencil-fine, frothy white head. Really fine juicy grapefruit and peach aromas. Touches of grapefruit, some lemon and pineapple on the tongue with a slow, delicate resiny finish. Soft and plump mouthfeel, low carbonation, medium body.

Cask @ Market Porter, Borough SE1. Pours a golden color with a small white head. Has a fruity malty hoppy aroma with some earthy hints. Fruity malty citrus hoppy flavor with some hints of caramel. Has a fruity malty hoppy citrus finish with some bitterness in the aftertaste.

Cask at the Eastbourne Beer Festival, 9th Oct 2008. Clear amber. Great caramel malt aroma with a toasted hint to the taste. The toffeeness is balanced by the dry Amarillo hops. My favourite Dark Star beer so far.

(Real ale) Pours hazy, golden colour, quite large foamy head. Aroma is malty with grassy hops. A bit tangy. Some flowery notes, also some apples, grapefruit and spices.

Cask (@ The Rake, Southwark): Deep golden, small, firm and lacy head; solid spicy, peppery hoppy nose; robust dry bitter flavour, light bodied; lingering hoppy finish with a fruity touch. Classy stuff...........
