Aroma of spontaneous yeast, leather, fresh apple, dusty wheat and some underlying grainy feel. Medium bodied with a soft carbonation. Moderated sour flavor with a hint of sweetness. Hazy golden yellow, with a small white head that fades. Musty basement aroma, light wheaty notes. Moderate sourness is the dominant flavour, but it is not overly sour by lambic standards. Pours a hazy orangish gold body with touches of bruised peach under a small tight bubbled covering of light beige head. The nose is full on cellar funk with a cheesy and moldy corKy mustiness. Lots of dry barnyard and a light yogurt note. Minimal acidity in the nose. The flavor is a perfect balance of funk and acidity with both being fairly aggressive. Finishes bone dry, yet there’s a slight sweetness before the wild yeast byproducts take over. Notes of cork, light oak, and lemon zest. Mouthfeel is dry and crisp with a nice attention getting acidity. Engaging pinpoint lively carbonation.
