Spicy aroma,reminding me of apples and bread. Flavour is sweet, but is restrained by good bitterness. In the end dryness takes over.Fizzy and full-bodied. 6-5-7-4-13.
Rerated on Maundy Thursday 2007: 2004 bottle at Kulminator. Hazy golden, still with a big white head. Fruity hop aroma with cellar notes. Cellar flavours kicking in from this aged bottle, still sweet and raisiny, yet dry. Lighter body than than when young, but still above medium and still fizzy. Looks like an unfiltered cider, an opaque golden tan. Appropriately there are apples on the nose along with a touch of cinnamon and cloves. Mouthfeel is vaguely ciderish as well, and there are apples on the mouth.... I’m starting to wonder! Quite a pleasant brew I definitely wouldn’t mind having this again. I can’t help but feel a strange desire to rest my head on on such a thick and lovely white head but I imagine it would make my head smell funny. Speaking of smells, the sweet honey candy smell of this beer is only slightly offset by a hint of the yeast used. The flavor is delightfully sweet as well with notes of apple and honey and just a hint of the golding hops used. Tiny bit of yeast in the finish is till pleasant and balances things off nicely. There’s a lot of stuff suspended in this one. Smells like a caramel apple with a splash of lemon juice and two or three slices of fresh-baked bread. Jesus, this stuff has an intense flavor. Very sweet at the beginning, then a huge spiciness comes through. The finish is long-lasting and slightly hoppy, with a hint of honey at the very end. A little overpowering up front, but the aftertaste is incredible.

Very strong apple doughy smell. Sweet taste turns caramel. Very sweet. A touch of bitterness from the hops and strong alcohol on the back end of the palate. Has only what I have described in past reviews as a cheese flavor component (like a lot of top Belgian Ales have.) It’s a combination of the hops and malts and sugars that all balance out to equate to my palate as a rich soft abbey sharp cheese flavor. Very complex palate flavor signature. Pours a very hazy orange, gold color with a very large, thick foamy head. nose is very sweet, caramel or candy maybe? very slight hops are present. nose also presents some grass and hay notes. taste is funky. has some yeast qualitys, alot of dry chalky feelings. Just noticed some lite citrus in the nose. back to the tast, it is very dry, like the sahara. but not at all flavorless, there are some definite peaks and valleys. hint of hops here, then some dry talcum powder effect. grass and hay leads to a rosin bag. its very peculiar. Im not quite sure what to make of it. I like it, then wish it hadnt visited my mouth. Im very confused. ok, now im beginning to feel some warming of alcohol. didnt feel that before. Im going to leave on a feeling of very dry, yeasty feeling with a slight alcohol wamth.
