| 4.4 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 4/5 | 10/10 | 4/5 | 18/20 | Jan 5, 2007 dark apple cider appearance. tons of yeast floating in a thick suspension. little head to speak of. pour smelled of apples from miles away. lots of that old spoiling apple/pear aroma. definitely some sweetish belgian yeasty aroma. probably one of the best first sips i have ever had. immediately sweet but not overwhelmingly so. lots of fruit, and absolutely no alcohol character at all. i say that alot, but i bet if you gave this to me when i was 17 i might not guess it had alcohol in it. palate is undercarbonated, which works surprisingly well. i am shocked. some sourness, the balance is extraordinary. call it sacrilege but i almost don’t want this to warm up from refrigerator temperature because it is perfect right now. thank god i wasted so much time and money on beer last year so that i can appreciate this beer today. Slightly murky body with a dark brown colour. Aroma was heavy malt with notes of caramel, toffee, nutty, roasted and some brown sugar in there as well. Full bodied with a creamy texture and an average carbonation. Moderated sweet flavour with light notes of bitterness. Light sweet finish with an average duration. Impressive and complex beer. Nose is semi-vinous and has lots of fruity easters-some plums, cherries, lemon. Taste is the same with a bit of oxidation, some nutmeg, and some earthy hops in the finish. Grainy aftertaste. Dark brown nearly opaque body with a couple of inches of persistant light tan head. Citrus sweetness with a hint of hop bitterness characterize the aroma. Fruitiness and roastiness dominate the flavor with some hop bitterness on the finish, unusual for a Belgian. On the heavier side of medium bodied. Not bad, but not sure it’s something I’d get again. Poured a reddish brown with a fluffy, frothy off-white head, good retention, slowly settled into a sudsy lacing.
Aromas of sour dark berries and apples drizzled with spicy alcohol, earthy, yeasty, bready and sugary.
Good carbonation and a crisp, dry and tart, carbonated velvety smooth medium bodied mouthfeel.
Good Quad taste, honey bready, plums and rum, a light citrus sour, a subtle candied sugary, an earthy, leafy, spicy hops, the alcohol is presence and has a warming, fruity nature to it, and a dry yeasty, malty finish with a lingering alcohol and hoppy twang.
All the De Dolle ales I’ve had have been upper trier, tasty and balanced, this is another must try.

Dark brown body with low carbonation, ruby glints and a lasting beige foamy head. Its very well balanced malty/hoppy aroma carries vineous and plummy notes. Alcohol is well hidden. Taste carries fruity (mainly dark cherries and grapes), yeasty and oaky hints. It ends with a long warming finish. Gorgeous winter beer!
