Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Crushed with Jakebra. 2004 bottle. Lots of sweet malts, citrus, yeasty sourness on the nose. Very sweet flavor mellows almost immediately into a bitter lemon peel finish. Very complex and excelent brew. Wish I could try the 2000.

2008 bottle, strong gusher with a pulpy orange body and big foam, aroma is belgian yeasty and sugar, flavors of refined sugar, bitter orange and a bitter rind finish

The bottle looks very children-like, but not bad. The beer in the glass is okay. The beer starts very strong and complex, malty and alcoholic. Notes of christmas-spices. Finish bitter-dry. Very good, but a bit too alcoholic.

2007 bottle. Let me start by saying that this beer was the most prolific gusher I’ve ever seen. Even after half the bottle had been poured, it was still gushing. Not to mention it was one of the eeriest looking pours I’ve ever seen. Poured a cloudy orange with yeasties like crazy. the yeast particles just hung in suspension, they didn’t fall out at all. weird looking. Aroma is aolt of citrus and other fruits and plenty of medicinal belgian yeast characteristics. Flavor is more of the same with some spiciness. Easy to drink for the ABV. Maybe it was all the other fantastic beer I had this day, but this one just wasn’t doing it for me.

11.2 oz. bottle. Sour, yearty aroma features orange, candy sugar, and crabapple scents. Pours a hazy, cloudy, effervescent orange/amber with huge, uneven, cream-colored head. Beatiful appearance. Very sweet taste with a bitter bite at the end. Spicy flavor, especially pepper. I’m not feeling it. Medium body. Forthy, lively, and silky in the palate. Some alcohol burn. Remarkably forgettable for such a big beer.

Bottle. Pours a nice amber color. Aroma is filled with yeast,spice,fruit and some caramel. Taste is spicey with some fruity and caramel notes. Fresh apple can be found. Nice warming finish.

not my style but a great work in brewing. aroma and taste of fruit in tea. sweet and delicious with candy properties as well as beer, coriander and banana. different than i would have expected but as good as has been reported. a bit spicy in the Belgian abbey tradition. moderate alcohol feel. really good.

2008 bottle. Cloudy orange-brown with a half finger of dirty white head. Aroma of citrus, dark fruits, caramel, and a musty zest. Taste is caramel with fruits over top and a drying alcohol and spiciness in the finish.
