Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Placeholder. 88 vintage thanks to Sprinkle. Fn amazing. Sour on the front, smooth on the back. Earthy and tart, with lots of candy and sugar. Texture is almost like a honey juice. Sour and great balance. Amazing.

33 cl. 2005 vintage. Opaque, orange-caramel color with lots of turbulent activity in the glass. Big cap settles to a lasting half-inch of icing. Vinous nose includes plum, dates, and mildly tart apple/cherry, all with a brown sugar coating. Initial flavors of dark fruit, caramel and brown sugar are balanced with some cellar funk and tartness. Heavy body is smooth, just watery enough to keep from being too sticky, and finishes almost dry with some chest warming.

2007 tasted in September 2008. Cloudy golden with huge white head that lingered. Caramel malty aroma. Full mouth. Caramel taste with chocolate finish. Well-balanced and highly complex. A winner. 2008 vintage in Dec 08, dark amber orange with big white head, big malts, orange, cinnamon, big bitter finish.

Have a case on order for the holidays. How this beer can not rate a 100 is beyond me. it has all of these wonderful candy tastes yet it’s not sickeningly sweet. Better than dessert in glass. Needless to say I love this beer

(Bottle, Monk’s Café, Stockholm) Orange/amber colour with frothy, off-white head. Slightly hazy. Fruity, vinous nose with notes of dried fruit, caramel, orange peel and spicy hops. Fruity taste with dried fruit, caramel, orange, bitter-sweet marmalade and spicy hops. Medium to full body, balanced sweetness. Warming with serious amounts of alcohol shining through. Tasty and nice. In short: spicy, bitter-sweet orange marmalade with a kick.

[07 bottle] I wasn’t aware this was 12% or I might have kept it for a few more years... or at-least a different night. Pours a murky yellow/golden with a huge super thick off-white creamy fine orange tinted foam. Strong aroma of fresh squeezed pineapple-orange juice, with some rich vanilla and a touch of alcohol, very juicy. Medium/full creamy mouthful with lots of very fine sizzling carbonation, actually kind of sticky/sugary. Sweet juicy first taste with a very noticeable taste of alcohol. Flavors of orange and pineapple, some bitter fruity yeast, finishes a bit metallic with lingering alcohol. I love the juiciness of the dry hopping and candi sugars, however I wish the alcohol was kept a bit more in check since there isn’t any toasty/nutty flavors to cover it up. So juicy. Still an amazingly well crafted brew and De Dolle is easily my favorite Belgian brewery.

Pours a cloudy, and chunky, orange color with a big foamy head that vanished quickly. Nice smell of orange peel, yeast, bread and a little alcohol. Very bubbly on the tongue where the alcohol hits first. Followed is some more citrus, caramel and a little spice. Good beer. Re-Rate: This is much better than my first rate would indicate. I don’t know if my palate has changed or what!

Opaque cloudy orange with lots of sediment and a moonster of a foamy head, that almost disappeared with some lace left behind. Alcohol, yeasty, and biscuity aroma, fairly weak. A little bit of lemon. Mouthfeel is good and full, a little fizzy. Alcohol is very evident at the start. Very nice bitterness of lightly floral hops and peppery alcohol. Long lasting spicy and slightly metallic finish. Great beer.
