Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

[1137-20080229] 11.6floz. "Rich and sweet" caramelized wheat germ aroma. Clear, amber orange body with a quick foamy off-white head and some floaties. Sweet balanced fruit flavour with wheat toast. Medium body. Nice and rich.

11.6oz. bottle, white cap, SPEC BREW 2005. Pours clear, but packed with sediment despite careful handling and pour, golden orange in color, with a fizzy white head that dissipates to a thin ring. Aroma is candied fruits, light spicy yeast, and some faint apple peel. Flavor is a nice blend of the same, gentler on the palate than I would have thought, quite smooth and just the right amount of sweet; warming but not alcoholic. Quite enjoyable, and imagine that aging will round the edges out nicely.

This is the standard all Belgian holiday seasonals should be aspiring for. Absolutely wonderful, with a rich and sweet toffee aroma, loads of candi sugar, with some orange rinds, a hint of yeasty clove and cinnamon. Alcohol bite comes through ever so slightly in the finish.

330 ml bottle. Dark reddish amber colour. Clear. Medium-sized white head. Lots of loose yeast at the bottom of the bottle. None in the glass fortunately. Rich sugary aroma with notes of citrus and crisp malts. Sharp spicy nose from the yeast. Lots of residual sugars, but nicely balanced by a lot of bittering hops. Really nice balance as the two extremes are both very distinct; intensely sweet malt sugars and sharp bitter hops. Lots of caramel from the malts and flowers from the hops. Bottled 2003.

Pours tan/red with white head. Nose has fruit and strong yeast after settling. Sugary sweetness dominates taste with apple in aftertaste and a little alcohol. The palate is a little sticky for my liking.

Had this on tap at State Line Liquors in MD. with afire and moses. Owner came around with a trappist glass of this brew and wow what a sample! Hazy gold with a cream foam head. Pungent fruit mixed aroma like a fine sparkling barley fruit wine. Sweet sour sultry mix with a unique malt smoothness makes this a top notch brew. Who wants to wait for christmas, we want this again and soon!

golden appearance with white head. flavor is tremendous with carndy sugar and strong malt component and a very strong spicy aspect. an amazing beer. tastes like a holiday tripel

Cloudy orange-honey color with thick eggshell foam that sticks. Spicy and sweet yeastiness with a lot of alcohol. First impression is a boozy tripel. Honey, citrus peel, spice (coriander), whiskey (bourbon). Sweet honeyed flavor impression. Light caramel, marshmallow, citrus fruit and booze. The alcohol burns giving a very dry feel. I thought this beer was a bit odd. It starts off pretty normal and almost boring, but builds and becomes a complex sipper.
