Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

golden appearance with white head. flavor is tremendous with carndy sugar and strong malt component and a very strong spicy aspect. an amazing beer. tastes like a holiday tripel

Cloudy orange-honey color with thick eggshell foam that sticks. Spicy and sweet yeastiness with a lot of alcohol. First impression is a boozy tripel. Honey, citrus peel, spice (coriander), whiskey (bourbon). Sweet honeyed flavor impression. Light caramel, marshmallow, citrus fruit and booze. The alcohol burns giving a very dry feel. I thought this beer was a bit odd. It starts off pretty normal and almost boring, but builds and becomes a complex sipper.

Pre-99 bottle shared by mmtmatrix, thanks Malcolm. Poured a deep copper color with a moderate beige head that diminished to a ring. Light, sweet caramel with a nice funky yeast character on the nose. Moderate tart entry leads into a light caramel maltiness with a nice, funky yeastiness with undertones of fruit including apple, pear, and some citrus. Smooth on the palate, great drying finish. Bottle, from the year 2006. Slight hazy golden yellow coloured with a huge white head. Aromas of oranges, yeast, dried fruits and apples. Flavour is fruity, sweet and with a dry finish. I know this beer just keeps getting better by cellaring, so I’ll save my other sample for another time in the future. This isn’t ready yet..

Ordered from Belgian Shop and it was good. VERY good. Nice rich amber color with a nice full off white head. Sweet, malty and dried fruits on the tongue. Alcohol is evident but not overpowering. Nice brew.

this stuff was the BOMB! had it at state line liquors in MD. with two other Knights courtesy of the owner! Nice hazy yellow and thick white head. aroma of sweet fruit and kind of sour grapes. Very malty and bitter taste. Didn’t notice any hops. Smooth,smooth,smooth. Did I mention that it went down smooth? Could not believe the ABV% on this and didn’t notice it in the taste AT ALL! But this one will kick you in the A** Do yourself a favor and pick one up. I will get this again!

On tap at State Line Liquors in MD. I was shopping with a couple of friends and the owner comes over to talk about some beer with us. Before we knew what was going on he was tapping us taster glasses of Oskar Blues Ten FIDY and as we were enjoying those he returns with trappist glasses full of Still Nacht. What a great store!

tapped a hazy gold color with a large creamy white head. amazing nose with so much going on that I can’t even recall all of the nuances. the flavor was equally amazing with some spice, a bit of tartness that drifted in and out of the palate, some fruity esters, the whole nine yards. at no point during the glass was alcohol present in the flavor though I sure felt it by the time I was finished. one of the best beers i have ever had.

Bottle. 2007. Pours a nice hazy red-amber colour with a small but good lasting creamish beige head. Sweet raisin dark fruity malty alco aroma. Great bit sticky mouthfeel. The flavour is quite sweet but comfortable with caramel and alcohol indeed along with a nice bitterness, some dark fruits and malt. Sweet bit burning bitter alco caramel finish.
