Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Bottle. Initially pours a clear orange/amber, but once the yeast is poured in (it doesn’t cake at the bottom), the beer becomes quite cloudy. Aroma of light fruits (apple, pear). Flavor of these same fruits, spices, plus a strong alcohol presence. I liked the light fruit notes in this beer...but they didn’t go very well with the 12% abv. Side by side with the Boskeun, I’d say that I like the flavor of Still Nacht better, but overall, the beer was less balanced and too alcoholic at times.

This is a great beer. 11.6oz btl from Knightly Spirits. It pours a red-amber color with a small off-white head. The aroma is of light fruit and brown sugar and molasses. It tastes sugary sweet with notes of citrus, nectarine, and other fruits with hits of alcohol and brown sugar tones. It finishes softly, but forces remembrance of the alcohol. Good stuff, and a great 100th rating beer!

Color: Cloudy, honey gold with a foamy tan ring and practically nonexistent head. Nose: Big and chewy raisiny notes with spicy cinnamon and caramel. Palate: Heavy caramel and pruny/raisin notes. Lemony pithy/pulpy notes. A refreshing effervescence and touch of milk chocolate on the finish.

2005 Bottle: Major gusher! A blowoff tube for the bottle would be helpful. Murky orange color. Pungent aroma of caramel, stone fruit and a subtle sourness. Taste is caramel, fruit and alcohol. Very nicely balanced, though a tad bit astringent. Thick texture. 7/4/8/4/16/3.9

2007 Bottle: Nearly the same color, but fortunately not a gusher. Thick head that dissipates fairly quickly. Strong caramel aroma with some astringency, a little less fruity than the 2005. Taste is caramel, peaches and alcohol. Very sweet. Alcohol is very assertive. 6/4/7/3//14/3.4

33cl bottle from World of Beer Largo. Pours a cloudy amber with a one finger white-tan head that dissipates quickly but still laces the glass. Aroma: Complex sweet and sour smells; difficult to decipher completely. Perhaps some bread and yeast overtones in the aroma with a fruity smell (pear?). Well-balanced flavor with sweet, sour and bitter combining effortlessly to provide an exceptional drinking experience. Creamy mouthfeel but the 12% ABV is well hidden in the intense flavors of the beer. Excellent beer.

Aroma: very interesting, pearcake, yeasty, sourish apfelstrudel... biscuity malts.
Flavour: nice, extremely full-bodied, yeasty, fruity, peppery, powerful, fresh & fruity.
Appearance: superturbid greying orange w/ grey particles. Pale foam tinted toward the colour of the body. Irregular bubbles, looks heavy.
Palate: VERY fizzy, thick, ridiculously creamy.

1996 bottle. Very hazy brownish color. Flavor is sweet, a bit of apple juice, somewhat tart, like a fine apple cider. Hop bitterness is all but gone. Just a smooth mellow sweetness left. Medium body. Hard to describe, as this is so different than most. Just a lot of smooth goodness.

1996 brew. Pours a very murky amber with tan head that dissipates to a thin layer. Incredibly interesting beer. Aroma is a caramelized sugar with tart aspects, like sour apple. Flavor has an incredible tart flavor to it. Hints of granny smith apples and cider mixed with this sweet syrup. The palate is so full of flavor it is hard to break down. Body is medium with a carbonation that lightens it. Very impressed with this.
