Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

A lot of sediment. Dark golden, with a white beige serious thick head. sharp carbination, alcohol slightly present. A strong beer. Spicy flavor.

2005 bottling. Hazy layered orange yellow color with a fleeting white head. Intense yeasty citrusy nose with pit fruits. Medium/full body. Huge, complex flavors dance on your tongue, back and forth malt yeast pit fruits herbal hops, never a dull moment with this brew. Excellent. 13007

Outstanding Belgian strong but a little typical. Aroma was big. Strong light fruit and spices. Melon, cantaloupe and corriander. Pour was perfect. Nice hazy orange with a 2 finger white head and sediment....oh sediment. Looked like someone put a cigarette out in the glass there was so much floating in there. Taste was extremely sweet. Too sweet actually. Light fruit, spice and candi sugar with a hint of yeast. Hides the alcohol perfectly. Tastes like am 8% beer. Great beer.

Pours cloudy amber with a thick billowing head. Needed to let it sit for a while to let the head stop growing and settle. Lots of little flotsam and jetsam floating carelessly around the glass. Aroma is banana, yeast, raisin, and slight alcohol. Taste is fruity, dark fruit like raisin, medium body, very smooth. Some candi sugar to balance, but not overpowering. Very apertif like. Alcohol comes through at the end with a little hint of banana. Really good.

Bottiglia da 33cl comprata al beershop "In Bocca al Luppolo" di Alessandria; versa colore ambrato chiaro con schiuma enorme, incontenibile. L’aroma è strano, per un momento temo che la bottiglia non sia a posto, ma poi l’acido un po’ vertiginoso si armonizza e assume toni fruttati di albicocca e pesca. Difficile resistere all’assaggio, ma per i primi sorsi è solo schiuma, che comunque mamma mia è pure buona!!! Quando si arriva alla birra mi confonde il corpo, denso ma frizzante e l’alcool è non poco presente nel sapore, ma un non so che di vinoso ne mitiga l’assalto mentre si disvela una complessità mica male. Prima esperienza con De Dolle, fra qualche giorno (o settimana) proverò la Dulle Teve, che sta al fresco sotto l’asse del tetto :)

11.2 oz bottle, served as an aperitif at the Free State 19th Anniversary Beer Banquet. Pour is gold-amber, slightly hazed, with not too much head. I thought it looked quite a bit like a Tripel in the glass. Aroma of strong, sweet fruit - plums, bananas, oranges. Some hops in the nose as well. Alcohol is quite present as well. Taste is a nice representation of the aroma, big sweet fruit flavors, candy sugar, with a heavy malt backbone and some nice hop spiciness towards the middle and finish. The finish also revealed the alcohol burn. Body was medium-full body. This was nice, but wouldn’t mind having it with a bit more age on it (I assume this was a pretty fresh bottle).

dark amber color, good white head, great rentention, and lacing. Aroma is full of ripe apples, and plums, and a nice yeastiness with a touch of alcohol. Mouthfeel is velvet, and super smooth. Flavour is very smooth, and silky, almost creamy, with big notes of apple, caramel, plums, and bready yeast. Wow, super nice beer, Cabonation is a little high, but otherwise outstanding.
