Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

2004 Bottle:
Pours a dark golden in color with very little head at all. Smell is lots of candy sugar, some banana and a little clove. Taste is all the same with surprisingly a good amount of heat from the alcohol coming through. Medium on the mouthfeel with absolutely no carbonation to speak of. This is a very good beer, and a treat to have on Christmas.

1996 vintage. Sweet and tart. Nice balance between the two. I’m really not sure if that’s how the beer originally was or if it was the 11 years of aging that was on it. Either way, this was definately a wonderful treat.

Very citrusy and sweet. Overall, the best beer we tried out of 3 different winter ales. Will definitely buy again, even though it was $5 a bottle.

Citrus flavor with very full body. Sweet aftertaste, almost too sweet. Some suspended solids in the liquid, but very delicious!

2006. pours a cloud clear gold. spicy sweet yeast aroma. spritzy yeast with good and sour finish. bannana in the background. good full bodied.

This golden-amber ale poured with a massive off-white head, eliciting a sharp fruity aroma. Since the head did not show any signs of dissipating, I sipped it off the top until I reached the liquid. The beer is initially bitter, but the candy sugar eventually creates a sweeter flavor followed by a hoppy bitter finish. This is a very complex brew that would certainly benefit from aging.

bottiglia del 2007 color d’orato carico buona schiuma piuttosto persistente considerando il contenuto di alcol ottima sentori speziato zucchero candito alcol in bocca riscaldante piena dolce contrastata da un forte luppolatura ed una lieve acidità una birra complessa

bottle poured cloudy appricot with a few yeast chunks floating in it. Nice thin white head Aromas of appricot, belguim yeast and some alcohol nice medium to thick mouth feel, flavors of sweet fruit honey spices with a light touch of hops, the alcohol is well hidden in this one of 12% this is a wonderful winter sipper.
