Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Bottled in Delirium Cafe, Brussels. 2006, Hazy dark yellow, amber color. Thick foamy beige head. Scent is sweet and fruity. Aroma is full of sweet fruits and a bit of alcohol. Flavour spicy and fruity and here alcohol makes u feel what u r drinking. Prefectly balanced, very nice beer

I’m pretty sure this is a 2005 vintage. Anyway, pours out a rusty colored orange, very hazy and can’t see anything through it. Little to no head to speak of, a bit of orange fizz for a second but then melts into nothing. Taking a deep sniff reveals, plums, cherries, light spices, and tart cherries. Really nice blend of aromas they have going on here. Upon first sip I realized this is a beer that needs to be slowly sipped and respected. Very complex beer here. At first I get a wave of cinnamon and clove then tart cherries and deep prunes. Apricot and pears as well. I’m really digging this fruity and tart blend with a hint of light spice. Very well made beer. I wish I had another one.

Bottle. Not sure on age but seems like a fresh one. Pours a cloudy and yeasty orange with little head. Aroma is yeasty and fruity and very belgian like but with a candy sweet intesity. Flavor is sweet, full of ripe peaches, plums, apricot, and candy apple. There is some light spiciness that almost takes the mind off the heavy dose of alcohol and sweetness. Finish is medium, warming. Syrupy mouthfeel with some stickiness and very little carbonation. This is a big strong candy like freak. I like it though. I may head out right now to get a bottle to age.

had in the pub of hotel Erasmus in Brugge. Bottle was aged many years per the barkeep, seemed to be - bottle was very dusty and label was worn thin. powerful brew with too many flavors to describe but overwhelming taste of cherries and prunes. Bubbled off the tongue on first few sips then mellowed out after a little while.

Bottle at Backdoor Café (Ghent). (And bottles at home in rerating) Appears as strong as it tastes. Orange golden with a strong head. Complex aroma with all kinds of hints but it is hard to destinguish them seperately. Definitely sweet fruit. Gives a very lively and warming mouthfeeling almost as a warning to be drunk carefully. Overall very interesting beer, I’m aging a crate to see how it evolves over time.

orange looking with lots of lacing. very intense first taste, almost overpowering. but after third taste or so you realize how complex and how good this beer is. bottle from city beer san francisco.

bottle. Unbelievable that this is a 12% beer, soo freakin good and smooth. Somewhat sweet with plum caramel and clove taste to it. I enjoyed it from the first drop till the last.

Bottle. Pours a hazy orange color. Very thick white head. Aroma is very yeasy, with a sweet/tart fruit hint to it. At 12% the alcohol is present in the beverage. The flavor to the brew is very complex, and actually quite hard to totally pin down totally.
