Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Bottle at Backdoor Café (Ghent). (And bottles at home in rerating) Appears as strong as it tastes. Orange golden with a strong head. Complex aroma with all kinds of hints but it is hard to destinguish them seperately. Definitely sweet fruit. Gives a very lively and warming mouthfeeling almost as a warning to be drunk carefully. Overall very interesting beer, I’m aging a crate to see how it evolves over time.

orange looking with lots of lacing. very intense first taste, almost overpowering. but after third taste or so you realize how complex and how good this beer is. bottle from city beer san francisco.

bottle. Unbelievable that this is a 12% beer, soo freakin good and smooth. Somewhat sweet with plum caramel and clove taste to it. I enjoyed it from the first drop till the last.

Bottle. Pours a hazy orange color. Very thick white head. Aroma is very yeasy, with a sweet/tart fruit hint to it. At 12% the alcohol is present in the beverage. The flavor to the brew is very complex, and actually quite hard to totally pin down totally.

Hazy orange with thick enduring white head. Aroma is pears, apples and cloves. Taste is sweet with lightly tart apple and thick with light biscuity hint-o-caramel finish and alcoholic warming. Carbonation is nearly perfect. Small bubbles, and lots of them. $5/12oz

2006 bottle at Eulogy in Philadelphia, PA. Pours a hazy golden with a nicely rententive white head. Aroma of yeast, candi sugar, and pear. Medium bodied with a soft but lively texture. Subtle complexities in the flavor, in which I get yeast, candi sugar, pear, clove, and apple. Earthy finish, in which you can sense the alcohol, but not taste it. Not a bad beer, but I was really expecting a standout here. This seemed rather ordinary to me. Perhaps I had an off night.

Glowing orange color, amazing frothy white head--looks like what you get on a well-made cappuccino or beaten egg whites. Simple aroma of yeast, orange, apple. Creamy, almost warming mouthfeel, taste has vanilla, alcohol, grapes, spice, snappy hop finish. The carbonation you can see flowing up the glass is strong but not overwhelming. Doesn’t drink like a yellow beer, not really sure what to think but I like it.

Pours a cloudy pale yellowish amber with little yeast particles floating around. The head on this monster is exqusite, extremely creamy, long-staying and very sticky to the glass. Aroma is very complex, oranges, Belgian sugar, vinious, raisins, cinnamon and cardemum. Mouthfeel is round, creamy, yet lively. Flavour is equally complex for a beer this light in colour. Sweet, vanilla, cardemum, oak, apples and a very warming touch through its non-too-apparent alcohol. Wonderful!
