Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Pours hazy orange with a massive white head, chunky lacing. Fruity nose, apples and light plums. Much yeast. Quite a bit of alcohol. Very warming on the tongue, spicy and fruity with banana, cloves, plums, caramel malts. A bit too boozy, but still very good.

Bottle. This bottle was about 3 years old. A deep amber coloured pour with a magnificent head. Apple, port like aroma. Sweet, dark fruits, plums, prunes, caramel taste. This beer is a world classic and tastes considerably better after many years of ageing.

33cl bottle. 2008 vintage at Hop Duvel, Gent. Pours hazy peach with a huge white head. Leaves amazing lacing. Aroma is hoppy. Some peach and herbs. Quite complex. Taste is very warming. You can feel the alcohol and the spices bitting your tongue. Head retention is really good. Taste is like aroma. Some hints of anice, cloves, banana. Finish is warm and bitter. Very complez brew but you really need to be in the mood for it. Very unique.

Bottle. Ruby golden pour. Very sweet smelling aroma has dark fruit notes. Would like to see how this beer ages. Dark malt and fruit flavors with sugar and alcohol warming finish.

2008 bottle at De Dolle Brouwers, poured by Kris himself. Deep reddish-copper color with a large off-white head. Aroma is caramel malt, spices, and candied apples. Flavor is all this plus vanilla, citrus, dark fruits, and mild hop bitterness. Very complex and very good. Palate fairly full with somewhat high carbonation.

Pours deep brown with a white/cream head that is very large. Smell is fruity with hints of orage spice and other citrus fruits. Taste is well developed with notes of caramel, spice some vannilla among others. The let down is the pallet, while it tastes good the flavor fads quickly. Overall a good belgian strong.

2008 Bottle - Thanks beerbill! - This gusher shot out the top, so I’m rating half a most likely messed up bottle...pours a hazy lt copper with a fucken massive off white head...aroma is a bit cheesy at first, but mellows to display very sticky apples, vanilla and citrus...flavour is similarly syrupy, thick in the mouth and highly carbonated, boozy, tart apple in the back of the throat, spice, dough, vanilla caramel and hop flowers without any bitterness...I gotta go lie down...

cloudy orange, lots of floaties, thick frothy eggshell head. mild aroma, lemon peel mostly, with some sweet light malt, licorice, and a bit of metal. flavor is like everything else from de dolle, this odd metalic artificial licorice thing. not sure what the issue is, but i am not a fan. other than that there’s some very bright lemon flavors and very little alcohol (12% is very well hidden), but this is not good. medium body, too much carbonation. as it warms it gets better, with a chewy sweetness that goes well with the citrus peel. it keeps the licorice metal finish though...
